- We are filling the sandwich cookies with a basic sugar free chocolate buttercream. To make a white, 'non-chocolate' filling, omit the cocoa and cut the butter (two tbsp to ¼ cup) as needed for consistency.

This chocolate sandwich cookie recipe feature crispy cookies with a chocolate buttercream centerfilling.
There is no added sugar in these cookies.
There are two parts to this recipe.
The first part of this recipe is making the chocolate cookies.
Once the cookies have fully cooled, we will make them into sandwiches with a chocolate buttercream filling.
Ingredients needed to make Sugar Free Chocolate Sandwich Cookies,
- Flour. All purpose flour was used to make my cookies. You can use an alternative flour that measures like all purpose flour, taking into consideration other ingredients needed to use that alternative (ie almond flour).
- Unsweetened Cocoa Powder. Used to give the cookies that chocolaty look and flavor.
- Baking Soda. The leavening agent used for the cookies.
- Butter. Your butter should be at room temperature. If you are using an unsalted butter, add ½ teaspoon of salt to the dry ingredients.
- Sugar Alternative. Use a granular sugar alternative that measures like sugar and that can also be baked with.
- Eggs. Your eggs should be at room temperature.
- Vanilla Extract. Adds a nice balance to the flavor of these cookies.
- For the filling- Sugar Free Powdered Sugar, Unsweetened Cocoa Powder, Butter (at room temperature), and vanilla extract.
Expert Tip 👉 For a more flavorful cookie, swap out the vanilla extract with another flavored extract.
How to make Sugar Free Chocolate Sandwich Cookies.
Prep: 15 minutes
Yield: 24 cookies
- Preheat your oven to 325 and prep two rimmed baking sheets with parchment paper or a baking mat.
- In a medium bowl, use a whisk to blend together the flour, unsweetened cocoa, and baking soda.
- Next, in a mixing bowl, beat together the butter and sugar alternative until creamy and fluffy (this can take a few minutes). Then add the eggs and vanilla, mixing until incorporated and creamy. You may need to scrape down the sides of the mixing bowl as needed.
- Add the dry ingredients from the first bowl to the mixing bowl and mix until just combined.
- Use a medium cookie scoop to scoop out the dough on to the prepared baking sheets. Make sure that the cookies are a couple of inches apart from one another as they will spread while baking.
- Bake the cookies for 12-15 minutes or until edges appear to be set and the centers are slightly crinkled across the top. Let the cookies cool completely on the baking sheets at room temperature.
- To make the filling, simple beat together the ingredients until creamy. You may need to make adjustments in the ingredients as needed to get your desired consistency. Then use a piping bag or zip top bag with a cut corner to apply the filling to the insides of half of the cookies. Place the inside of a second cookie over or facing the filling to make a sandwich.
- Lastly, refrigerate the cookies until the filling is fully set.
Expert Tip 👉 When applying the filling to the cookies, apply to filling to about a quarter inch of the edges of the cookies. This will help to prevent the filling from spilling out of the cookie sandwiches.
