Ingredients needed to make this recipe for Cauliflower Mac N Cheese.
- Butter- 2 tablespoons, melted.
- Sour Cream- ⅔ cup (full fat for keto).
- Heavy Cream- ¼ cup.
- Garlic- 2 tablespoons, minced. That is like six cloves minced.
- Salt- 1 teaspoon (can omit if using salted butter).
- Pepper- 1 teaspoon.
- Cauliflower Rice- 10 ounces. Bagged cauliflower rice comes in 10 ounces. That is about 1 ¼ cups.
- Shredded Cheddar Cheese- 1 cup.
- Bacon- 3 slices, cooked and chopped. The thicker the better. That is about ¼ cup.
- Parsley- 1 tablespoon or as needed for topping.
How to make Keto Low Carb Mac and Cheese
- Preheat your oven to 425. Prep a square baking dish well for nonstick (grease if possible with oleo or butter). This recipe contains melted cheese, which can be a pain to clean up. 🙂 Also, make sure that you butter is melted.
- In a large mixing bowl , use a whisk to combine together the melted butter, sour cream, heavy cream, garlic, salt and pepper.
- Next, stir in the riced cauliflower. Then transfer the mixture to your prepped baking dish. Make sure that you spread the mixture evenly.
- Top the mixture with the cheddar cheese and then the bacon. Bake for 20-25 minutes or until the cheese is melted. Top with the parsley and allow to set for a few minutes before serving.
