However, these crackers do not have all of the carbs in them like the ones that come in that big box.
Low Carb Cheddar Crackers .
This is a great idea for a snack.
Especially, if you are wanting something that you can enjoy on a low carb diet.
You probably already know about those famous cheddar cheese flavored crackers that come in the big box.
Those crackers really have their fair share of carbohydrates in them. After all, they are made with flour.
The good news is that you can indeed make a tasty cracker without adding all purpose flour.
Also, you can make these tasty crackers yourself in your own kitchen. This means that you can add the ingredients that you want to add and know exactly what you are adding.
I am making this recipe with sharp cheddar cheese.
This is because I really like the flavor that sharp cheddar cheese has. This is especially true when it comes to a cracker recipe such as this one.
You could certainly use the cheddar cheese of your choice in this recipe.
I mean, a medium cheddar cheese could certainly go well in this recipe. Another good option would be to use and extra sharp cheddar cheese in this recipe.
Blending you cheese with other cheese flavors would also add a great taste to these crackers.
Even if it is just cheddar, blending between the different kinds of cheddar can bring a great taste to your crackers. As long as the cheese is grated, you should be good to go in a recipe such as this one.
I also want to touch upon personalizing your homemade cheddar crackers.
The best way to personalize your crackers, beyond the cheese that you decide to use, is to use a great tasting seasoning.
While you could use the standard salt, which there is nothing wrong with, I like to add something with a bit of a punch.
My choice for any recipe like this one is an everything or multipurpose seasoning.
Trader Joe's has an "Everything But The Bagel" seasoning which is perfect!

sesame seeds, sea salt flakes, dried minced garlic, dried minced onion, black sesame seeds, poppy seeds.

The recipe for Low Carb Cheddar Crackers
As mentioned, you can make this recipe with sharp cheddar cheese. However, medium cheddar cheese could certainly go well in this recipe. Another good option would be to use and extra sharp cheddar cheese in this recipe.
What you will need to make this Low Carb Cheddar Crackers
You will need a flour alternative.
Make this recipe gluten free by using gluten free flour instead of regular flour. Or, you can make this recipe low carb by using low carb Carbalose flour.
- Cheddar Cheese- 8 ounces grated.
- Butter- ½ stick (4 tablespoons) cut into 1 tablespoon pieces.
- Seasonings- 2 teaspoons total. Salt is the standard. Cayenne is another popular choice.
- Flour Alternative- 1 cup. Blanched Almond Flour is a popular choice. As are Coconut Flourand my favorite, low carb Carbalose flour .
- Ice Cold Water- 3 tablespoons.
- If using almond or coconut flour please add an egg to your ingredient list.
How to make Low Carb Cheddar Crackers
- Part of the process of making this is to roll out the dough and then refrigerate it. So, start by preparing a baking sheet with a sheet or parchment paper on it. The have and additional piece of parchment paper that is the same size as the baking sheet available.
- Start your cracker dough by placing the cheddar cheese, butter and seasonings in a bowl. If you are using the almond flour or coconut flour, mix in your egg at this time. Cream this mixture together. Alternatively, you could use a food processor to do this for you.
- When the mixture is well blended, you can mix in the flour. The dough will become crumbly and when it does, you can start dropping, a teaspoon at a time, of the ice water into the dough. Blend the dough between ice water additions. When the dough has formed, that is not longer crumbly, wrap the dough in plastic wrap and refrigerate for 45 minutes.
- Preheat your oven to 350. Transfer the refrigerated dough to the prepared cookie sheet (from the first step). Place the dough on to the parchment paper sitting on the baking sheet and then place the additional parchment paper over it. Then use a rolling pin to roll the dough out. Roll the pin over the top layer of parchment. Note that if you are using the Carbalose flour, you do not need to use the top layer of parchment between your dough and your rolling pin. The other flours tend to be sticky which is why we use this method.
- The dough should be rolled out to about a quarter inch in thickness. You can then cut your crackers into squares. A pizza cutter or similar kind of cutter should work well.
- Bake for 15-18 minutes until your crackers begin to brown. Allow these crackers to cool before serving.
