You may be wondering, how healthy are veggie tots
When someone asks me this question about a recipe, I always start by saying that a recipe is really only as healthy as the ingredients that go into it (well..and the cooking method may count too).
If you add nutritionally questionable ingredients to your recipe, you probably already know what the result may be.
This recipe really only includes ingredients that you already know about.
There are no ingredient that you cannot pronounce and unlike may low carb veggie tot recipes, this recipe has no cheese or cauliflower in it!
Whenever I post a good air fryer recipe, someone always asks, how do I get the best out of my air fryer.
To be honest, I have two air fryers. I have the easy and inexpensive egg-shaped air fryer and then I have fancier multi use oven with air fryer (reader suggested this to me and I love it!).
Here are some air fryer tips that you can use in this recipe for veggie tots.
Leave space between the tots when baking as over-crowding the basket can result in uneven baking.
Midway through the air frying process, you should shake the air fryer baskets or flip what is getting air fried if you are using a multi-oven.

- This is a vegan recipe that used flaxseed egg alternative. However, if you are not a vegan diet follower, you can omit the water and flaxseed and use two real eggs instead.
- Yes, this recipe can be made in an actual oven instead of an air fryer. I would bake these for 20 to 25 minutes, flipping mid-way, or until they turn golden brown.
How to store left over veggie tots.
Allow the veggie tots to cool and store them in the refrigerator in an air tight container for up to a week. You should also be able to freeze these tots, allowing them to defrost before reheating.

This recipe calls for almond flour. If you decide to sub in another kind of flour, use one that measures 1:1 with almond flour (not coconut flour for example).

Ingredients needed to make low carb air fried vegetable tots.
Shredding or grating can be done in a food processor or by hand.
- Carrots- 1 cup shredded or grated or a combination.
- Zucchini- 1 ½ cup shredded or grated or a combination.
- Flaxseed Meal- 2 tablespoons.
- Water- 6 tablespoons.
- Almond Flour- ¾ cup.
- Sesame Seeds- 1 tablespoon (white preferred). Yes, you can omit this or sub in another similar seed.
- Seasonings- 1 -2 teaspoons or as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.
- Olive Oil- 1 tablespoon.
How to make veggie tots in air fryer.
- Start by grating or shredding the carrots and the zucchini. You can do this by hand or use a food processor. Then transfer this to a large bowl that is lined with paper towels or a clean kitchen towel to allow for the vegetables to drain for 20-30 minutes. Adding a dash of salt can help facilitate this.
- To make the vegan egg, simply combine together the flaxseed meal with the water in a small bowl. Allow this to sit for about five minutes.
- In a large mixing bowl, combine together the vegetables with the other ingredients (vegan egg, flour, seeds, seasonings, and oil . Mix this until it combined .
- You should be able to form 18-20 ping pong ball sized tots using your hands. Preheat the air fryer at 400F. Place the tots in the air fryer, allowing space between them. You may have to make this recipe in batches depending on the size of your air fryer.. Bake them 8-10 minutes for one side, and then 5 more minutes once you flip them over or shake the basket.
- Allow for the air fried tots to cool before serving.
