I mean, not many of us can resist a seeing a sweet potato pie on the holiday dessert table.
How to choose a sweet potato.
Sweet potatoes are commonly sold solo rather than in bags (at my local grocery store anyway).
Look for a smaller or medium sized sweet potato that is firm and has no bruises.
How to prepare your sweet potato for this recipe.
Leaving the skin on the potato is an option however, before you do anything I would suggest cleaning the skin (I soak mine and rinse them). To cut the potatoes first cut them in half lengthwise then slice the halves into sticks that are close in size and about a quarter to one half inch thick.

I just mentioned that you should choose a sweet potato that is firm and free of bruising. To cut the fries simply cut the potato in half lengthwise and cut the potatoes into fries that are around a quarter to one half inch thick.

- Some folks like to add a bit of cornstarch (a tablespoon or two) to the seasonings. The cornstarch will help make the fries more crisp.
- For best results, I suggest making this recipe in batches. It is better to not have the sweet potato fries overlap when in the air fryer because they will not air fry evenly.
- It is essential that you turn or shake the fries at least once while they are in the air fryer. This will help them air fry more evenly.

- In a mixing bowl, use a whisk or a fork to mix together the olive oil and seasonings. Then toss the sweet potatoes fries in the seasonings. It may be easiest to use your hands to toss the pumpkin to assure that the slices all get evenly covered.
- Place as many sweet potatoes fries that will fit without overlapping into the basket of the air fryer. Air fry for six minutes and then toss the fries in the basket. Continue to air fry the fries until crisp and browning (about another five or six minutes). Repeat until all of the fries are done air frying,
