What you should know is that pumpkin is indeed a member of the squash family. One cup of pumpkin has about thirty calories and zero fat in it.
Also, that one cup of cubed pumpkin nets out at about seven grams of carbohydrates.
Pumpkin also has some nutrients in it.
What surprises me is that one cup of pumpkin has nearly twice the recommended amount of Vitamin A for a day. Plus, pumpkin also gives us Vitamin C, Potassium, and a bit of protein in it.

- While this specific recipe is for pumpkin fries, you could try using another kind of squash. I know that there are some good squash choices, such as butternut squash, that could work in this recipe.
- Some folks suggest that actually soaking your pumpkin strips in water for up to an hour will help them crisping up in the air fryer. I have not tried this however, I suggest that if you try doing this you make sure that you can get rid of as much water as possible before air frying them.
- For best results, I suggest making this recipe in batches. It is better to not have the pumpkin fries overlap when in the air fryer because they will not air fry evenly.
How to prepare your pumpkin.
Cutting the pumpkin for this recipe reminds me of cutting up a watermelon. Slice the pumpkin in half and then half again.
Remove the seeds and the skin if possible (or you can simply cut the skin off or cut away from it). Finally, cut the pumpkin slices into one quarter to one half inch wide strips.

I mentioned that you should use a smaller pumpkin rather than the kind that you would choose to carve into a Jack O Lantern. Baking or pie pumpkins are more flavorful and will give you better meat for this recipe.
Also mentioned that the pumpkin meat should be cut into 'French fry-like' strips.
Once you have quartered or halved the pumpkin (depending on size) remove the skin and seeds. The you can cut the pumpkin slices into one quarter to one half inch wide strips.
Ingredients needed to make air fried pumpkin fries.
- Pumpkin- 1. Use a pie or cooking pumpkin for the best pumpkin meat. Have the meat skinless and seedless as well as cut into a fry shape.
- Olive Oil- 1 tablespoon.
- Seasonings as desired- 2-3 teaspoons total. This can include Italian Seasonings, Salt, and/or Pepper. Other options include blends such as a Mediterranean Diet Seasoning Blend or something with more of a 'zing' such as one of these seasoning blends.
How to make Air Fried Pumpkin Fries
- Preheat your air fryer to 400. Make sure that your pumpkin has been sliced into one half inch wide slices that resemble fries.
- In a mixing bowl, use a whisk or a fork to mix together the olive oil and seasonings. Then toss the pumpkin fries in the seasonings. It may be easiest to use your hands to toss the pumpkin to assure that the slices all get evenly covered.
- Place as much sliced pumpkin that will fit without overlapping into the basket of the air fryer. Air fry for six minutes and then toss the fries in the basket. Continue to air fry the pumpkin until crisp (about another six minutes). Repeat until all of the fries are done airfrying,
