These Chocolate Cakesicles are made with a decadent brownie and covered with a thick layer of chocolate. To make those brownies decadent, please add a cup of sugar free chocolate chips to them when you bake them (you can omit this step if you prefer to).
You will also need a few more ingredients for this recipe that you may not have.
White Chocolate Chips that are sugar free. Also, Sugar free chocolate frosting (I do have recipes for chocolate frosting). and Sugar Free Sprinkles.
Ingredients needed to make Sugar Free Cakesicles.
- Sugar Free Brownie Mix- 1, baked with 1 cup of Chocolate Chips that are also Sugar Free .
- White Chocolate Chips that are Sugar Free- 2 ½ cups divided.
- Sugar Free Chocolate Frosting- ¼ cup .
- Pink Gel Food Coloring- as needed.
- Sugar Free Sprinkles- as needed.
- Silicone cakesicle molds with cakesicle or popsicle sticks
How to make this homemade cakesicles recipe.
- In a microwave safe bowl, melt two cups of the sugar free white chocolate , stopping to stir at 30-second intervals until smooth. Then stir in several drops of pink food coloring until you get you desired pink color.
- Next, add about a tablespoon of the melted chocolate to each the molds. Using a spoon or moving the molds around with your hands, spread the chocolate around the sides of the mold, making sure it is thick along the sides. Place the sticks into the molds and place the molds into the refrigerator to harden for about ten minutes.
- While the chocolate in the molds is hardening, break up the cooled brownies with your hands into crumbles and transfer them to a food processor or good mixer. Process or blend the brownies until they resemble a breadcrumb consistency. Place the brownie crumbs into a large mixing bowl.
- Add half of the chocolate frosting to the brownie crumbs in the large bowl and use your hands to mix until the ingredients blended together. You can add additional frosting as needed to the bowl as needed. When you are able to pinch the mixture and it holds together rather than being gooey or sticky, you are done blending the ingredients.
- Remove the molds with the hardened chocolate from the refrigerator and add another tablespoon of melted chocolate (you may need to reheat) to the molds in order to cover the sides. Use a spoon for best results. Then press the brownie and frosting mixture into the molds and cover with the remaining melted chocolate. Tip: continue to push in the sticks as needed into each mold as they may shift during this step.
- Place the molds back into the refrigerator to harden. Once hardened you can pop the cakesicles from the molds and place them on to a work surface lined with parchment or wax paper. Top with additional melted chocolate and sprinkles or as desired for decoration.
