Fresh blueberries or frozen blueberries can be used. However, you could sub in another fruit instead such as as quartered strawberries.
Ingredients needed to make a blueberry bundt cake from pancake mix.
- Pancake Mix- 2 cups. You can use a sugar free pancake mix or a low carb keto pancake mix or your favorite pancake mix. Please make sure that you are using 'pancake mix' and not just a 'baking mix'.
- Baking Powder- 2 teaspoons.
- Milk or water- you will need as much as you would need to make two cups of pancake mix as per the instructions on the mix that you are using. If your pancake mix states that for one cup of mix you will need ½ cup of water or milk, then you will need one cup (½ cup X 2 as two cups of mix are needed) of water or milk for this recipe. Vegan folks can use a nut milk or other similar milk as long as it measures 1:1 with regular milk.
- Vanilla Extract- 1 teaspoon. Feel free to sub in lemon extract or another extract as desired.
- Blueberries- 1 cup. Blueberries should be dry and at room temperature for best results with this recipe.
- Optional- toppings such as sugar free pancake syrup or sugar free powdered sugar .
How to make Sugar Free Blueberry Pancake Bundt Cake
- Preheat your oven to 350. Double prep a bundt pan. This means for best results, use two methods of nonstick. For example, nonstick spray and then dust with flour.
- Place the blueberries on the bottom of the bundt pan, dispersing them evenly.
- In a mixing bowl, use a fork or a whisk to blend together the pancake mix with the baking powder. Then stir in the liquid (milk or water) and the extract. Mix until just combined- do not over mix.
- Evenly pour the mixture over the blueberries in the bundt pan. Bake for 20-25 minutes or until the cake begins to brown. Allow the cake to cool for 10 minutes. Tip: gently running a butter knife around the perimeter of the cake just out of the oven can help loosen the cake for later removal from the pan.
- To remove the cake, place a large plate over the cake and flip the cake over so that it sits on the plate. Be patient as you want the entire cake to come out in one piece. Then top with sugar free powdered sugar or your choice of toppings and serve.
