This recipe however is more of a frosted brownie than a candy (both are good ideas in my opinion!).

You may be wondering what is grasshopper flavor.
This brownie recipe is...loosely... in my opinion, based upon 'grasshopper' flavor.
You may be familiar with other similar dessert such as 'grasshopper pie".
There are no real grasshoppers (as in the bug) involved with this recipe.
Instead, the term 'grasshopper' simply refers to the minty flavor.
That minty flavor, I would guess, is based upon the 'grasshopper' drink which contains Crème de menthe liqueur.
Here are some tips for making Sugar Free Mint Chocolate Chip Brownies
This recipe gets its minty flavor from mint extract. To make this more of a "grasshopper" brownie, you can sub in actual Crème de menthe liqueur (you may want to add a bit more but, keep the sugar in mind when you do use this.).
Here are some more helpful tips.
- Because this recipe is so 'fudgy' when it bakes, when you do the toothpick (comes out clean) test it may not be totally accurate. I suggest testing the brownies in more than one location and check the edges of the brownies for crispness also for better accuracy. Loosely cover the brownies with foil if you feel that the edges are baking too quickly and allow the brownies to bake for a few more minutes.
- Lining the baking dish with parchment paper that overlaps the edges of the dish will make for an easier clean up. Also, the overlapping parchment paper will make it easier to remove the brownies and cut them into squares for serving.
- Make this recipe keto low carb friendly. Simply sub in low carb all purpose flour and keto sugar free chocolate chips.
How to make Sugar Free Mint Frosting
The green or frosting layer of this brownie is a basic sugar free buttercream frosting inspired from grasshopper brownies. I also have other sugar free or low carb frosting recipes that you can try as well.
Simply beat together the following ingredients until you reach your desired consistency.
For the food coloring, add two at a time until you have reached the desired color of green (five at most should do it).
- Butter- ½ cup softened to room temperature.
- Cream Cheese- 8 ounces, also softened to room temperature.
- Mint Extract- 1 teaspoon. Feel free to add additional as desired for flavor.
- Sugar Free Powdered Sugar- 3 cups. Add the powdered sugar in small amounts until you reach your desired consistency (you may not need it all or you may need small amounts of milk to thin it out).
- Green Food Coloring- 3-4 drops or as needed.
How to store Sugar Free Mint Brownies.
These brownies should be stored in an airtight container.
Brownies can be stored in the refrigerator for about a week or can be frozen for up to three months.

I mentioned above this this is a two layer recipe. The bottom layer is a minty brownie and the top layer is a minty frosting.
Also mentioned, this recipe gets its minty flavor from mint extract.
To make this more of a "grasshopper" brownie, you can sub in actual Crème de menthe liqueur. Keep in mind that it can also contain sugar in it.
Ingredients needed to make Sugar Free Mint Chocolate Chip Brownies
- Flour- ¾ cup. Low carb folks can sub in low carb all purpose flour
- Salt- ½ teaspoon (can omit if using salted butter).
- Unsweetened Cocoa Powder- ½ cup.
- Sugar Free Chocolate Chips- 1 cup divided.
- Butter- ½ cup softened to room temperature. This is one stick or eight tablespoons.
- Brown Sugar Alternative- 1 ¼ cups. Please us a sugar alternative that measures 1:1 with brown sugar.
- Eggs- 3 large.
- Vanilla Extract- 1 teaspoon.
- Mint Extract- 1 teaspoon. Feel free to add additional extract as desired for a more minty flavor.
- Green Mint Frosting- See recipe above.
How to make Sugar Free Mint Chocolate Chip Brownies
- Preheat your oven to 350 and prep a baking dish for nonstick.
- In a medium mixing bowl, use a fork or whisk to blend together the flour, salt, and unsweetened cocoa powder. Set this bowl aside.
- Melt one half of the chocolate chips (½ cup) either using the double boiler method or in an a microwave using a microwave safe bowl. ( Microwave method: Microwave for one minute or until melted stopping every 15 seconds to stir.) Set this aside.
- Now in a large mixing bowl, cream together the softened butter with the brown sugar alternative. Then beat in the flour mixture and then the eggs and the extracts. Gently stir in the melted chocolate.
- Lastly, fold in the remaining chocolate chips and transfer to the prepped baking dish. Bake for 20-25 minutes or until a toothpick comes out mostly clean when tested in several different locations. Tip: rotate the baking dish after the first ten minutes of baking and bake in the center of the oven for a more even baking.
- Allow the brownies to fully cool before adding the frosting. Top with additional chocolate chips as desired.
