Ingredients
Ingredients needed to make easy veggie wraps.
- Beetroot- 1 small, grated.
- Grated Carrots- ½ cup.
- Red Bell Pepper- ½, chopped (about a quarter cup).
- Onion- ½ cup chopped (red preferred)
- Avocado- 1. The avocado should have the skin and pit removed. Slice the avocado into slim slices.
- Mushrooms- 4 fresh and sliced.
- Large Low Carb Tortillas or Wraps- 4.
- Vegan Mayonnaise- ½ cup or as needed.
- Spinach leaves- 1 cup. You can use any dark green leaf if desired.
How to make these Keto Low Carb Vegetable Wraps
- Prepare the vegetables if you have not done so. Grate the beetroot and carrots. Chop the red pepper and the onion. Slice the avocado and the mushrooms.
- It is easiest to make each wrap one at a time. Soften the individual tortillas by placing them into the microwave for 10-20 seconds or until soft. Then lay them on a cutting board or flat surface.
- Distribute the mayonnaise throughout the tortilla. Place the ingredients, one at a time, on top of half of the tortilla, leaving space on the edges so that you can fold the tortilla properly.
- Start by folding in the sides leaving about an inch in between in the center. Fold in the sides of the wrap, bringing up the bottom using your thumbs. Continue rolling the wrap until done.
