I like to add sugar free vegan chocolate chips, chopped walnuts, or a few berries to the batter. Or, you can change up the extract by using something other than vanilla extract such as almond or rum extract.
Ingredients needed to make low carb keto vegan pancakes.
- Almond Flour- 1 cup
- All Purpose Flour- ½ cup. This can be regular all purpose flour, low carb keto all purpose flour, or gluten free all purpose flour. Please choose what works best for your needs.
- Baking Powder- 2 teaspoons.
- Salt- ¼ teaspoon.
- Banana- 1. The banana should be mashed, it is best to use a soft or overripe banana for easier mashing.
- Almond Milk- ½ to ¾ cup as needed for consistency. Earlier I mentioned that subbing in a bit of bubbly water can help make your pancakes more fluffy. Also, keep these pancakes keto friendly by using unsweetened almond milk.
- Egg- 1. Vegan folks can use an egg replacer such as 1 tablespoon flaxseed meal+ 3 tablespoons of warm water (allow to thicken in the refrigerator).
- Vanilla Extract- 1 teaspoon.
How to make Delicious Low Carb Vegan Pancakes.
- Use a whisk or a fork to mix together the almond flour, all purpose flour choice, baking powder and salt in a mixing bowl. Make a well in the center of this mixture.
- In another bowl, blend together the mashed banana, almond milk, egg/replacer, and vanilla extract. Transfer this mixture to the well that you created in the dry ingredients from the first bowl. Stir until just blended- lumps are okay. You can adjust the wet ingredients if needed to thin out the batter.
- Preheat on low-medium heat a skillet or griddle that has been prepped with a bit of oil or plant based vegan folks can use a nonstick skillet.
- Drop the batter into 2 tablespoon sizes on to the skillet/griddle and cook. Cook the first side until the edges begin to brown and then flip. If the pancakes seem to be cooking too fast you can bump the heat down to low. It should take only a few minutes for each side to cook.
- Serve immediately.
