This pancake recipe is a great way to start you day!

I like that these pancakes taste great without adding sugar to them!

Did you try my Easy Low Carb Keto Pancake recipe?

That pancake recipe is also keto low carb but, with a vegan option.
This recipe is a vegan recipe that is also low carb keto friendly.

I am always looking for the perfect way to store my food. Luckily, I found these genius ideas for food storage which may also be helpful for you!

This recipe is for anyone asking how do you make vegan pancakes from scratch.

To be honest, making vegan pancakes from scratch is not as hard as you may think.
It really is about having the ingredients on hand more than anything in my opinion.

Making vegan pancakes that are also low carb keto friendly can be a bit tricky.

I say that mostly because of the adjustments that need to be made to satisfy both diets.
The good news is, that it is possible to make these pancakes and even better, make them taste good.

People always ask what makes pancakes fluffier.

Fluffy pancakes really are the ideal kind of pancake for most of us.
This probably has something to do with how yummy fluffy pancakes look when you are cutting into them and the syrup is oozing all over your next bite.

In most pancakes, it is the gluten that helps make the pancakes fluffier.

This is a result of the air becoming trapped in the gluten of the pancakes and thus, allowing the pancakes to get fluffy. However, this recipe is gluten free which means that we will have to add a bit of 'magic' to the mixing bowl to help make our pancakes fluffy.

Here are some tips for making pancakes.

I just mentioned that it is the air reacting with the gluten that makes pancakes fluffy. However, since these pancakes are gluten free, we will make adjustments to the recipe to get fluffy pancakes.

Here are some more helpful tips.

    1. I always tell my readers that it is essential that you use fresh ingredients for the best results in recipes such as this one. This is especially true with the dry ingredients that go into pancakes.
    2. Make these pancakes even tastier. Add sugar free vegan chocolate chips, chopped walnuts, or a few berries to the batter.
    3. I mentioned that there are a few tricks to help make the pancakes more fluffy. One way to add more air to your pancakes is to add a bit of seltzer or sparkling water (subbing for part of the liquid first). Another option, if your batter seems too thick, you can try adding a bit of these waters to thin it out as needed.

what do you eat with keto pancakes

Fruit is always an option with pancakes and choosing a lower carb fruit such as a strawberry (net about .5) may work. Also, there are keto low carbohydrate syrups that you can find online.

The recipe for Delicious Low Carb Vegan Pancakes

I mentioned above that it is essential that you use fresh ingredients for the best results in this recipe. This is especially true with the dry ingredients that go into pancakes.

Also mentioned is that you can add additional ingredients to these pancakes to make them taste even better.

I like to add sugar free vegan chocolate chips, chopped walnuts, or a few berries to the batter. Or, you can change up the extract by using something other than vanilla extract such as almond or rum extract.

Ingredients needed to make low carb keto vegan pancakes.

    • Almond Flour- 1 cup
    • All Purpose Flour- ยฝ cup. This can be regular all purpose flour, low carb keto all purpose flour, or gluten free all purpose flour. Please choose what works best for your needs.
    • Baking Powder- 2 teaspoons.
    • Salt- ยผ teaspoon.
    • Banana- 1. The banana should be mashed, it is best to use a soft or overripe banana for easier mashing.
    • Almond Milk- ยฝ to ยพ cup as needed for consistency. Earlier I mentioned that subbing in a bit of bubbly water can help make your pancakes more fluffy. Also, keep these pancakes keto friendly by using unsweetened almond milk.
    • Egg- 1. Vegan folks can use an egg replacer such as 1 tablespoon flaxseed meal+ 3 tablespoons of warm water (allow to thicken in the refrigerator).
    • Vanilla Extract- 1 teaspoon.

How to make Delicious Low Carb Vegan Pancakes.

    • Use a whisk or a fork to mix together the almond flour, all purpose flour choice, baking powder and salt in a mixing bowl. Make a well in the center of this mixture.
    • In another bowl, blend together the mashed banana, almond milk, egg/replacer, and vanilla extract. Transfer this mixture to the well that you created in the dry ingredients from the first bowl. Stir until just blended- lumps are okay. You can adjust the wet ingredients if needed to thin out the batter.
    • Preheat on low-medium heat a skillet or griddle that has been prepped with a bit of oil or plant based vegan folks can use a nonstick skillet.
    • Drop the batter into 2 tablespoon sizes on to the skillet/griddle and cook. Cook the first side until the edges begin to brown and then flip. If the pancakes seem to be cooking too fast you can bump the heat down to low. It should take only a few minutes for each side to cook.
    • Serve immediately.
