As mentioned, we will use a fathead keto low carb recipe for the bread.
For the sauce, I suggest that you use a low carb pizza sauce.
You may be wondering what is Fathead dough made of.
We know that regular dough is made with flour and yeast along with a few other ingredients depending on what that dough is intended to be used for. Fathead dough however, is a bit different.
Fathead dough is friendly to gluten free, keto, and low carbohydrate diets.
In this recipe we will use the fathead dough as a crust.
You will find that this kind of dough works well in this recipe.
Here are some tips for making keto low carb pizza roll ups.
As mentioned, fathead dough is used in this recipe. Making extra dough could be a great idea if you plan on using it in other recipes beyond this one.
Here are some more helpful tips.
- Fathead dough can seem to be sticky to work with. I suggest that when you go to roll the dough out, you place the dough in between two pieces of parchment paper first.
- Adding additional cheese to your pizza roll ups is optional. I say this because the fathead dough has cheese in it already and we are adding a bit of Mozzarella cheese on top. However, a sprinkle of grated Parmesan may be a perfect addition to these roll ups.
- If your fathead dough seems kind of tough to work with, try heating it before topping it to make into roll ups. Simply roll the dough out, use a fork to poke holes in it for air, then heat the dough in the oven at 350 for four to five minutes. This will make it easier to roll.
How do you make Keto pizza sauce from scratch?
In a small sauce pan on low-medium, sauté one clove or a teaspoon of minced garlic for one minute. Then add a cup of tomato sauce or puree along with two teaspoons of Italian seasonings (salt and pepper to taste) along with one to two teaspoons (sugar equivalent) of sugar alternative . Cook until thickened and allow to cool.

I mentioned earlier that this recipe for pizza roll ups uses my fathead dough recipe. This recipe is also made in an air fryer.
I also mentioned that adding additional cheese to your pizza roll ups is optional.
I say this because the fathead dough has cheese in it already. However, a sprinkle of grated Parmesan may be a perfect addition to these roll ups.
Ingredients needed to make Keto Low Carb Pizza Roll Ups
- Fathead Dough- 1. I suggest that you make this dough just before using it in this recipe because it will be easier to work with.
- Low Carb Pizza Sauce- 2 tablespoons plus additional if needed. I shared a recipe above for low carb pizza sauce.
- Mozzarella Cheese- ½ cup. Shredded or sliced.
- Toppings- such as sliced pepperoni.
- Seasonings as desired. Such as Italian seasonings.
How to make Keto Low Carb Pizza Roll Ups
- Make the fathead dough as described in this recipe.
- Place the fathead dough on a large piece of parchment paper. Then place another piece of parchment paper on top of the dough. Use a rolling pin to roll the dough out between the two pieces of parchment paper. Roll the fathead dough into a rectangle shape until the dough is about ¼” thick.
- Next, layer the remaining ingredients on top of the dough. Avoid getting the ingredients within a half inch of the long sides of the dough.
- For the next step we will roll the dough from the long side to long side.
- Use a sharp knife to cut the roll into 1 ½ to 2" pieces. You will get between six and eight pieces.
- Preheat the air fryer to 350 and give the basket a quick spray of nonstick. Place sliced pizza roll ups into the air fryer. You can spray the roll ups with olive oil. Air fry at 350° for five to seven minutes or until done.
- Serve with low carb pizza sauce or the dip of your choice (blue cheese or ranch dressing?).

- ½ cup Pepperoni -sliced or topping of your choice

- Make the fathead dough as described in this recipe. Place the fathead dough on a large piece of parchment paper. Then place another piece of parchment paper on top of the dough.
