Sugar Free Ginger Pecan Cookies
This is a sugar free version of a flavorful cookie idea.
Ginger pecan cookies are especially popular during the holiday season as well.
Did you try my recipe for Ginger Snap Cookies?
That Ginger Snap cookie recipe is another popular cookie during the holiday season that features the taste of ginger.
This recipe also includes pecans and does not have molasses or a molasses alternative in it.
This recipe features that flavor of ginger thanks to ground ginger. You can find ground ginger here.
People often ask what does ginger do to your body.
Ginger is a spice that has 'medicinal' history.
As a result, many equate ginger with health benefits today.
The experts tell us that ginger is a good source of antioxidants.
Those antioxidants can be helpful with high blood pressure and fighting certain diseases.
I will say that ginger is used to flavor beverages and food that I consume often and you may as well.
You may be wondering what are ginger cookies made of.
Certainly, there is ginger in this cookie recipe.
That ginger is added in spice form as this is what works best for a cookie that bakes in the oven.
It only takes a small amount of ginger to get that great taste.
To balance out the strong flavor of the ginger, we will add sweetener.
That sweetener should be sugar free and have the ability to be bakes with.
Here are some tips for making these ginger cookies.
These Ginger cookies are chewy on the inside and crispy on the edges.
This balance is achieved through refrigerating the dough and how we bake the cookies.
Here are some helpful tips.
- Creaming of the butter with the sugar alternatives is an important step to achieving the perfect texture in these cookies. These ingredients should be mixed until smooth and creamy before following to the next step.
- The baking method is also important to these cookies. I suggest rotating the baking sheets to get an evenly baked cookie. We want a chewy cookie in the center while crispy in the edges to result.
- The cookie dough can be, and really should be, made in advance and refrigerated for a better cookie. Refrigerating the cookie dough allows for the flour to hydrate and absorb all the butter and ground ginger flavors.
How to store Ginger Pecan Cookies.
These cookies should be stored in an air tight container.
If properly stored, these cookies should last for about a week.

How to make Sugar Free Ginger Pecan Cookies
- In a medium bowl, use a fork or a whisk to blend together the flour, baking soda, salt, and ground ginger. Set this bowl aside. Then in a mixing bowl, beat together the butter with the sugar alternatives (white and brown) until creamy. When creamy, add the vanilla extract and the eggs.
- Add the dry ingredients from the first bowl to the mixing bowl. Do this by adding half of the dry ingredients at a time, mixing gently between additions. Mix until just blended. The fold in the chopped pecans. Cover the mixing bowl and refrigerate for at least an hour.
- When you are ready to bake, preheat the oven to 325 and prep two rimmed baking sheets for nonstick (I use parchment paper). Use a cookie scoop to scoop out the cookies and place them about two inches apart on the baking sheets. Then use the bottom of a glass or flat object to slightly flatten each cookie.
- Bake for seven minutes and then rotate the baking sheets. Continue to bake for another seven to nine minutes or until the cookie edges turn lightly golden. Transfer the cookies to a cooling rack to allow them to finish setting. You can top the cookies with drizzled melted sugar free white chocolate at this time as well.
