To make this cookie you will need unsweetened cocoa powder. You will also need sugar free keto friendly chocolate chips to make this a really chocolaty cookie.
We will also give our cookies a minty flavor.
To get the minty flavor you will need peppermint extract.

When people ask me if something sugar free is also keto friendly, I tell them it depends.
Really, anything is keto or low carbohydrate friendly if the ingredients that go into making it are.
Luckily, there are a lot of sugar free and keto low carb options these days.
I will say that 99% of the time, if something is keto and low in carbs it does not have sugar in it and is thus, sugar free. However, it is always best to read the packaging and look for 'net carbohydrates' to know for sure.
Here are some tips for making these sugar free keto chocolate mint cookies.
While almond flour is the flour the flour of choice in this recipe you can sub in another nut flour. However, if you decide to use another flour, please use one that measures 1:1 with almond flour (you may also be able to omit the egg!).

- I always like to remind people to use ingredients that are fresh. This is true for the dry ingredients as well as the other ingredients.
- Make this a vegan recipe. Simply sub in a vegan egg for the regular egg (see details on packaging for usage).

Make this a keto thin mint cookie!
This recipe can also be made as a sugar free and keto 'thin mint' cookie.
Adjust your almond flour to one cup, add an additional tablespoon of the cocoa powder, bump up the peppermint to a teaspoon, and omit the chocolate chips from the cookie itself.
When you bake the cookies, flatten them before adding them to the oven to bake.
Once the cookies have cooled you will need to cover them with chocolate. Simple melt together a cup of sugar free chocolate chips with three to four teaspoons of coconut oil (or as needed for consistency).
Ingredients needed to make these sugar free keto mint cookies.
- Almond Flour- 1 ½ cups.
- Unsweetened Cocoa Powder- 1 tablespoon.
- Sugar Free/Keto Chocolate Chips- ½ cup.
- Coconut Oil- ¼ cup.
- Egg- 1, at room temperature.
- Peppermint Extract- ½ teaspoon.
- Sugar Free White or Dark Chocolate Chips- ⅓ cup, for topping.
How to make Sugar Free Chocolate Mint Cookies
- Preheat you oven to 350 and prep a cookie or baking sheet for nonstick.
- In a mixing bowl, use a fork or whisk to combine together the almond flour and the unsweetened cocoa powder.
- Next, in a microwave-safe bowl, melt together the chocolate chips with the coconut oil. When you microwave, stop every thirty second to stir. Microwave until just melted. Allow this to cool for a few minutes.
- Meanwhile, lightly stir in the egg and the peppermint extract with the dry mixture form the first bowl. Then add the melted chocolate with the coconut oil. Stir until just mixed.
- Use a spoon or small scoop to scoop our individual cookie dough for each cookie and roll the dough into a small balls. Place the cookie dough balls on to the prepped baking sheet, Press this in with the backside of a spoon or your hand for a flat cookie. Bake the cookies for for nine minutes (you will probably not be able to see any browning because of the color of the cookies). Remove the cookies from the oven and allow them to cool on the sheet for five minutes before transferring to a cooling rack.
- Once the cookies have fully cooled you can drizzle additional melted chocolate over them.
