- Flour. All purpose flour was used to make my crumb bars.
- Sugar Alternative. Use an alternative that measures like sugar and that can also be baked with.
- Sugar Free Chocolate Baking Chips or Unsweetened Semi-Sweet Chocolate (chopped). This is divided.
- Heavy Cream. Heavy whipping cream can also be used.
- Vanilla Extract. Added for a bit of flavor balance.
- Walnuts. Your walnuts should be chopped.

Tips for making the best Chocolate Crumb Bars.
The amount of flour added for the base layer is for a basic crunchy shortbread crust. For a more crumbly layer you can add up to a quarter cup of additional flour or use cold butter.

- For a more chewy base, sub in a half cup of old fashioned oats for the same amount of flour.
- This is one of those recipes that over-mixing can affect the structure of the base layer. It is best to mix the ingredients used in the base layer until just combined rather than over-mixing them.
- For a nut free version of this recipe you can simply omit the nuts and use seeds or crumbled baked cookies instead. Other kinds of nuts that can work in this recipe include pecans or peanuts.
- If the dough gets sticky when you press it into your baking dish you can wet your fingers or spray a bit of nonstick on them.
- The bars are done baking when the center appears to be set.
- Lastly, allow your bars to completely cool before slicing them.
How to make Sugar Free Chocolate Crumb Bars
Prep Time: 25 minutes .
Bake Time: 40 minutes .

- Prepare. Preheat your oven to 350 and prep an 8x11 glass baking dish well for nonstick.
- Base. Outfit your mixer with a whisk attachment and then beat your butter on high until smooth and fluffy. Add the flour, sugar alternative, and vanilla extract to the bowl and beat the ingredients on medium until the dough comes together (about two to three minutes).
- Press. Measure out two cups of the base mixture and then set the remaining aside. Use your fingertips to press the two cups of base mixture into your prepared baking dish. You can use a small rolling pin to help even out the dough.
- Bake. Bake your base layer crust for 10-12 minutes or until the edges are golden brown. Then allow the crust to set while you prepare your ganache layer.
- Ganache. Place your ganache chocolate into a heatproof bowl. In a small saucepan, heat your heavy cream over medium heat, whisking often, until small bubbles begin to form around the edges (avoid allowing it to boil). Then carefully pour the heavy cream over the chocolate in your bowl and let the heavy cream melt the chocolate. You can stir the ingredients after a few minutes to help it along. Once the chocolate has melted you can carefully pour it over your crust. Use the backside of a spoon to evenly spread it around.
- Crumble Layer. In a clean bowl, combine together the remaining dough, the remaining chocolate, and your walnuts. Then evenly sprinkle this mixture over your chocolate ganache layer.
- Bake. Return your baking dish to your oven and continue to bake for 25-30 minutes or until the center is set.
- Cool. Allow the baked crumb bars to fully cool before slicing into servings.
Expert Tip ๐ For a richer chocolate ganache use sugar free dark chocolate chips for baking. To make a thicker ganache you can add up to a half cup of additional chocolate chips.
How to store chocolate crumb bars.
Once your bars have fully cooled, they should be stored in an airtight container, with parchment paper between layers. When properly stored, crumb bars should keep for up to five days when refrigerated or frozen for up to a few months.
