Brownie Batter Ingredients
- Unsweetened chocolate baking bar. The bar should be broken up into pieces.
- Butter. If you are using unsalted butter you can add a half teaspoon of salt to your flour.
- Brown Sugar Alternative. Use an alternative that measures like sugar and that can also be baked with.
- Eggs. At room temperature for optimal blending.
- Vanilla Extract. Added for a bit of flavor balance.
- Flour. All purpose flour was used to make my brookies.
- Unsweetened Cocoa Powder. Use a good quality cocoa powder for the best flavor.
Cookie Dough Ingredients.
- Butter. Your butter should be melted.If you are using unsalted butter you can add a half teaspoon of salt to your flour.
- Brown Sugar Alternative. Again, select an alternative that measures like regular brown sugar and that can also baked with.
- Egg. At room temperature.
- Vanilla Extract.
- Flour. All purpose flour was used in making my brookies.

Tips for making the best brookies.
The brownie portion of this recipes uses a baking bar to get that chocolate flavor and consistency. While chocolate chips could be used, a baking bar will give the brownies are richer flavor and texture.
More helpful tips for you.
- Use fresh ingredients in both your brownies batter and cookie dough. This is essential especially with your dry ingredients as expired ingredients can, and most likely will, affect your brookie results
- Make this sugar free recipe low carbohydrate and keto diets friendly. Simply swap out the all purpose flour with a low carb all purpose flour and make sure to use low carbohydrate chocolate chips.
- This recipe was made in a 9" square baking pan. For more yet smaller brownies, you can use a larger pan or for thicker brookies use a smaller pan. Baking times may vary however.
- I like to line my baking pan with parchment paper that overhangs the edges of the pan. This not only makes it easier to clean up my mess, it makes it easier to remove the cooled brownies for slicing.
- Because chocolate chips are used in this recipe, using a toothpick to test for doneness may give false results (you will get melted chocolate). You can try doing the test in different areas if this happens.
- Allow your brookies to fully set and cool before slicing them. Otherwise, you may get brookies that are a mess.
How to make Sugar Free Brookies
Prep Time: 20 minutes .
Bake Time: 30 minutes .
Servings: 16 brookies .
- Prep. Preheat your oven to 325 and prepare a square baking pan (9") for nonstick. I like to use parchment paper that overhangs the edges of the baking pan for a recipe such as this one.
- Brownie Batter. In a large microwave safe bowl, melt together the chocolate with the butter, stopping to stir every 30 seconds. Carefully remove the bowl from the microwave and whisk in the brown sugar alternative and vanilla extract. Then whisk in the flour, eggs, and cocoa powder, whisking until smooth and just combined. Set this bowl aside.
- Cookie Dough. Beat together the melted butter with the brown sugar alternative on high, using a beater attachment until creamy (about three minutes). Then add the egg and vanilla and continue to beat for another minute. Scrape down the sides of the bowl and the beat in the flour and baking soda. Lastly, fold in the chocolate chips.
- Layer. Press spoonfuls of the cookie dough into the bottom of the pan, leaving gaps between the spoonfuls (image 2). Layer this with the brownie batter and then top the brownie batter with additional spoonfuls of the cookie batter (image 3).
- Bake. Bake your brookies for 28- 30 minutes or the edges have set and the center is still soft.
- Cool. Let the brookies cool/set in the baking pan before removing them for slicing. Because there is cookie dough in this recipe, setting is important in this recipe.
Expert Tip๐ Leftover cookie dough can be used to make a small batch of cookies or frozen for up to three months to use later.

How to store cookie brownies
Once cookie brownies have fully cooled, they can be stored in an airtight container. When properly stored, cookie brownies should keep at room temperature for about five days or frozen for up to three months (thawed before serving).
