  • Prep. Preheat your oven to 325 and prepare a square baking pan (9") for nonstick. I like to use parchment paper that overhangs the edges of the baking pan for a recipe such as this one.
  • Brownie Batter. In a large microwave safe bowl, melt together the chocolate with the butter, stopping to stir every 30 seconds. Carefully remove the bowl from the microwave and whisk in the brown sugar alternative and vanilla extract. Then whisk in the flour, eggs, and cocoa powder, whisking until smooth and just combined. Set this bowl aside.
  • Cookie Dough. Beat together the melted butter with the brown sugar alternative on high, using a beater attachment until creamy (about three minutes). Then add the egg and vanilla and continue to beat for another minute. Scrape down the sides of the bowl and the beat in the flour and baking soda. Lastly, fold in the chocolate chips.
  • Layer. Press spoonfuls of the cookie dough into the bottom of the pan, leaving gaps between the spoonfuls (image 2). Layer this with the brownie batter and then top the brownie batter with additional spoonfuls of the cookie batter (image 3).
  • Bake. Bake your brookies for 30 minutes or the edges have set and the center is still soft.
  • Cool. Let the brookies cool/set in the baking pan before removing them for slicing. Because there is cookie dough in this recipe, setting is important in this recipe.
