Microwave the ingredients until melted, stopping to stir every 30 seconds (it should take about a minute and a half to two minutes). Then let the ingredients sit while you start the next step.
- Sugar Alternatives. In a large mixing bowl, whisk together the eggs, sugar alternatives, and vanilla extract. Then add the melted ingredients to the bowl and mix until well combined.
- Dry Ingredients. Scrape down the sides of the bowl and then add the flour and unsweetened cocoa powder to the mixing bowl and mix until just combined.
- Chocolate Chips. Use a rubber spatula or similar item to fold in the remaining chocolate chips.
- Bake. Transfer the ingredients to your prepared baking pan and then bake the brownies in the center of your oven for 20-25 minutes, or until the edges have set and the center is still soft.
- Cool. Let the brownies cool in the baking pan for about 15 minutes before removing the brownies from the pan.
Expert Tip๐ Using the toothpick test for determining whether or not the brownies are done baking may not work in this recipe as the soft chocolate chips can give a false result.
