Sugar Free Chocolate Chip Brownies

  • Prepare. Preheat your oven to 325 and prepare a square baking pan for nonstick.
  • Melt. In a microwave safe bowl, melt together the butter and semi sweet chocolate (not the chips that are added later on). Microwave the ingredients until melted, stopping to stir every 30 seconds (it should take about a minute and a half to two minutes). Then let the ingredients sit while you start the next step.
  • Sugar Alternatives. In a large mixing bowl, whisk together the eggs, sugar alternatives, and vanilla extract. Then add the melted ingredients to the bowl and mix until well combined.
  • Dry Ingredients. Scrape down the sides of the bowl and then add the flour and unsweetened cocoa powder to the mixing bowl and mix until just combined.
  • Chocolate Chips. Use a rubber spatula or similar item to fold in the remaining chocolate chips.
  • Bake. Transfer the ingredients to your prepared baking pan and then bake the brownies in the center of your oven for 20-25 minutes, or until the edges have set and the center is still soft.
  • Cool. Let the brownies cool in the baking pan for about 15 minutes before removing the brownies from the pan. While the brownies are cooling you can press in additional chocolate chips on the top of the brownies while still warm.
