    Made with no added sugar, these fluffy muffins are a delicious treat that can be enjoyed for breakfast, lunch, or even as a snack.

    Ingredients needed to make chocolate chunk muffins.

    • Flour All purpose flour was used to make my muffins. You can try using an alternative flour if it bakes and measure like all purpose flour.
    • Baking Powder and Baking Soda These are the leaveners used in making these mudding.
    • Butter melted and at room temperature. Also, Oil . Select a neutral oil such as vegetable oil.
    • Sugar Alternative. Use a granular sugar alternative that measures like sugar and that can also be baked with.
    • Sour Cream . Full fat sour cream is added to these muffins to make them more tender. An alternative to using sour cream is using an unflavored full fat Greek yogurt.
    • Vanilla Extract Added for that flavor balance.
    • Egg . Use an egg that is at room temperature for better ingredient blending.
    • Unsweetened Chocolate Bar for Baking. Carefully chop up your chocolate bar into chunks that can be easily enjoyed while eating your tasty muffins. Can you use sugar free chocolate chips for baking instead? Sure.

    Expert Tip๐Ÿ‘‰ Why are we using both butter and oil in this recipe? First of all, if you want to use just one of these fats, simply add the total fat amount to your mixing bowl to keep your moisture balance intact. Using both oil and melted butter in this recipe gives us the moisture of oil and the flavor of the butter, which can result in a really tasty muffin!

    How to Make Sugar Free Chocolate Chunk Muffins

    Servings: 12

    1. Preheat your oven to 400 and prep your muffin pans for nonstick. I like using muffin liners for a recipe such as this one.
    2. In a medium bowl, use a whisk to combine together the flour, baking powder, and the baking soda.
    3. Next, in a large mixing bowl, beat together the butter, oil, and sugar alternative until creamy.
    4. Add the sour cream, vanilla extract, and egg to the mixing bowl and mix until incorporated.
    5. Scrape down the sides of the bowl and add the dry ingredients from the first bowl to the large mixing bowl. Mix this until it is just combined, taking care to not overmix these ingredients.
    6. Use a rubber spatula to fold in the chocolate chunks. You can leave some chunks behind to press into the tops of your muffins later.
    7. Fill each muffin cup about โ…”rds full and then top each muffin with additional chocolate chunks as desired.
    8. Bake for 18-20 minutes or until the edges of the muffins turn golden brown. If you are using a toothpick to test for doneness, take into consideration that the melted chocolate chunks may give you a false result. Allow the muffins to cool for 10-15 minutes before removing muffins from the pan to allow the chunks to set.

    Expert Tip๐Ÿ‘‰ Your dairy ingredients (egg and sour cream) should be at room temperature before adding them to this recipe. This will allow for better blending of the ingredients.

    My muffins were made using regular all purpose flour. You can try using an alternative all purpose flour, such as low carbohydrate all purpose flour, as long as it measures and bakes like all purpose flour.

    1. You can make these muffins even more like they came from a bakery by using a jumbo sized by using a jumbo sized muffin pan.
    2. When selecting a sugar alternative to use in this recipe, it is a good idea to use one that is granular and that measures like regular sugar. Also, use a sugar alternative that is able to be baked with.
    3. Sour cream is used in this recipe to add additional moisture and to make these muffins even more fluffy. Full fat sour cream should be used for best results.

    Leftover muffins should be stored in an airtight container. If properly stored, they should keep for up to a few days at room temperature or frozen for a few months.
