Sugar Free Chocolate Chunk Muffins

  • Preheat your oven to 400 and prep your muffin pans for nonstick.
  • In a medium bowl, use a whisk to combine together the flour, baking powder, and the baking soda.
  • Next, in a large mixing bowl, beat together the butter, oil, and sugar alternative until creamy. Add the sour cream, vanilla extract, and egg to the mixing bowl and mix until incorporated.
  • Scrape down the sides of the bowl and add the dry ingredients from the first bowl to the large mixing bowl. Mix this until it is just combined, taking care to not overmix these ingredients.
  • Use a rubber spatula to fold in the chocolate chunks
  • Fill each muffin cup about ⅔rds full and then top each muffin with additional chocolate chunks as desired.
  • Bake for 18-20 minutes or until the edges of the muffins turn golden brown.
  • Allow the muffins to cool for 10-15 minutes before removing muffins from the pan to allow the chunks to set.
