Sugar Free Peanut Butter Buckeye Balls

Or, as some folks like to say, an easy to make candy that nearly everyone can agree upon.
The ingredient list for making a buckeye is not a long one.
Obviously, we will be using sugar free peanut butter in this recipe. When mixed together with the sugar free powdered sugar we get the perfect yummy result!
People always seem to ask why are they called Buckeye Balls?
For me, I had a friend from Ohio who game me her interpretation of this quandary.
Apparently, the buckeye in this recipe is a nod to the 'Buckeye' Tree.
The Buckeye Tree is used for pulp or landscaping purposes.
This one popular for making furniture tree, is the state tree for Ohio.
It is the nuts that fall from the Buckeye Tree that has inspired the look of the buckeye that is featured in this recipe.
This Buckeye is okay to eat and in fact yummy to eat.
The other kind of Buckeye, the nut that falls from the tree, can be somewhat toxic if it is not shelled and roasted first.
Some people thing that they look a lot like chestnuts however, they do not taste the same.
The Buckeye treat that we are making in this recipe simply just looks like the nut kind.
Yet, this Buckeye tastes more like a chocolate covered peanut butter candy. Actually, these Buckeyes pretty much are chocolate covered peanut butter candy or truffles.
