These Sugar Free Peanut Butter Buckeye Balls are such a yummy treat.
I love the way that the chocolate and peanut butter work together in creating such as delicious taste.

Sugar Free Peanut Butter Buckeye Balls

Sugar Free Peanut Butter Buckeye Balls

This is the sugar free version of such a favorite chocolate covered peanut butter truffle.
Or, as some folks like to say, an easy to make candy that nearly everyone can agree upon.

The ingredient list for making a buckeye is not a long one.
Obviously, we will be using sugar free peanut butter in this recipe. When mixed together with the sugar free powdered sugar we get the perfect yummy result!

People always seem to ask why are they called Buckeye Balls?

For me, I had a friend from Ohio who game me her interpretation of this quandary.
Apparently, the buckeye in this recipe is a nod to the 'Buckeye' Tree.

The Buckeye Tree is used for pulp or landscaping purposes.
This one popular for making furniture tree, is the state tree for Ohio.
It is the nuts that fall from the Buckeye Tree that has inspired the look of the buckeye that is featured in this recipe.

This Buckeye is okay to eat and in fact yummy to eat.

The other kind of Buckeye, the nut that falls from the tree, can be somewhat toxic if it is not shelled and roasted first.
Some people thing that they look a lot like chestnuts however, they do not taste the same.

The Buckeye treat that we are making in this recipe simply just looks like the nut kind.
Yet, this Buckeye tastes more like a chocolate covered peanut butter candy. Actually, these Buckeyes pretty much are chocolate covered peanut butter candy or truffles.

There are a few ingredients that you will need for this recipe that you may not have on hand in your pantry at the moment.

I mentioned earlier that you can use this sugar free peanut butter in this recipe for your sugar free peanut butter. Alternatively, you can buy sugar free peanut butter online.

Also need for this recipe is sugar free powdered sugar, which you can make using this recipe.

You can find sugar free powdered sugar online as well. Also,
Sugar Free Chocolate Chips can be found online too.

I should also mention a few tips that I have for you when it comes to making homemade Buckeyes.

    1. Make these Peanut Butter Buckeyes Keto or Low Carb by using ingredients that are not only sugar free, that are carb free too.
    2. The chocolate needs to be really warm and the candy needs to be really cold to make the perfect match when you go to coat the candy.
    3. If the balls seem to sticky when you are rolling them into shape, try dusting your hands with a bit of extra powdered sugar or applying a bit of nonstick to your hands.

How to make Sugar Free Peanut Butter Buckeye Balls

    • This recipe works well when the balls are placed on wax paper. Prepare a baking sheet, with wax paper and set this aside.
    • In a mixing bowl, cream together the sugar free peanut butter, butter, sugar free powdered sugar and vanilla extract. When you are able to form the mixture into 1- 1 ยฝ" balls by rolling the dough between your hands. Place each ball on the wax papered baking sheet. Tip: place a toothpick into each of the balls to make dipping easier later on.
    • Place the prepared balls in the freezer until hard- about 25-35 minutes.
    • When you are ready to dip the balls in the chocolate, melt the chocolate in a microwave or using the double boiler method. Be sure to stir well as the chocolate melts. If using a microwave, simply microwave for 30 second intervals stirring between intervals. You want the chocolate to be really very warm for best results in this recipe.
    • Remove the peanut butter balls from the freezer and dip each one into the chocolate, leaving the area around the toothpick free of chocolate. Then place the individual balls back on to the wax paper and refrigerate them. If you run low on chocolate simply melt more.
