I like how this is so similar to my recipe for Sugar Free Keto Chocolate Covered Candy.
The big difference between the twois that the chocolate is on the inside of this recipe with the coconut being on the outside.
 

To be honest, this treat is more than just a candy.
I suppose that you could easily, as people do, put any recipe like this one into the candy category.
However, it is really a lot like a small cake or cookie too in a way.
 

I hate when food goes bad because it has not been stored correctly. Luckily, I found some Genius Ideas for Food Storage that you might find helpful too!

The truth is that this recipe is based upon a common recipe for cacao balls but, only this one is made without adding dates.

A while back, it seemed to be food blog fashionable to make recipes with dates. I mean dates are known to be a healthy thing to eat so I can see why people would want to put them into recipes.

Dates also have a lot of natural sugar in them.
That natural sugar seems to intensify as the date gets older too. As a result, it is hard to control exactly how much of any kind of sugar is getting added to a recipe when you add dates and sugar to it.
 

This no bake coconut covered cocoa balls recipe has no dates added to it.

Instead, we are basing it on unsweetened cocoa powder. While sugar free folks can use rolled oats in this recipe, low carbohydrate diet followers can use an oatmeal substitute such as one of these. However, you could also simply use coconut flakes instead of the oatmeal too.

This recipe calls for a fat that is needed to hold everything together.
You could use butter for this. However, I have a recipe for sugar free homemade peanut butter you can use instead of butter.

  1. Use a scoop such as one of these, to scoop batter into to keep the ball sizes similar.
  2. Lightly spray or hands with a bit of nonstick to help keep the balls from sticking to them when you roll the balls into shape.
  3. Make the batter a head of time and freeze or refrigerate to roll it into balls.
  4. Make these to give out as holiday gifts to your friends and family.
  5. Use these candy wrappers or small liners or cups like these to make yours look more professional!

This recipe gets even better when you add extra ingredients to the mix.

  • Substitute an extract such as rum extract or mint extract for your vanilla extract.

The recipe for Low Carb Coconut Cocoa Balls

As mentioned, you will need unsweetened cocoa powder and coconut flakes for this recipe. Also needed is sugar free powdered sugar.
You can make your own sugar free powdered sugar using this recipe or you can buy sugar free powdered sugar already made online.

This recipe calls for a fat that is needed to hold everything together.
You could use butter for this. However, I have a recipe for sugar free homemade peanut butter you can use instead of butter or shortening.
You can find other great butter alternatives online.

 

What you will need to make this Low Carb Coconut Cocoa Balls

 

  • Sugar Free Powdered Sugar- 4 cups. Make your own sugar free powdered sugar using this recipe or you can buy sugar free powdered sugar already made online.
  • Unsweetened Cocoa Powder-¾ cup.
  • Sugar Free Condensed Milk- 1 ¾ cups. You can use this recipe for sugar free condensed milk, find a sugar free condensed milk ( or alternative) online, or use unsweetened coconut milk which you can find here.
  • Vanilla Extract- 2 teaspoons. You can Substitute an extract such as rum extract or mint extract for your vanilla extract.
  • Coconut Oil (extra virgin) - 1 tablespoon. As mentioned, you could use an alternative fat or even sugar free homemade peanut butter.
  • Coconut Flakes- 1 ½ cups divided.
  • How to make Low Carb Coconut Cocoa Balls

     

    • In a large mixing bowl, use a fork or whisk to mix together the sugar free powdered sugar and the unsweetened cocoa. Then stir in the unsweetened condensed milk, vanilla extract, coconut oil and 1 cup of the coconut flakes. At some point you will probably need to knead this by hand.Place this mixture in the refrigerator for at least a half hour to allow it to set.
    • Prepare cookie or baking sheets with parchment paper . Place the remaining coconut flakes in a shallow bowl or plate.
    • Using a scoop or tablespoon, scoop mixture from the bowl and then shape the mix into balls- about 1- 1 ½". Then roll the balls in the remaining coconut and place on the prepared baking sheet. Cover and return this to the refrigerator or freeze to firm up. Store these balls individually wrapped or covered well with wax paper or parchment paper separating the layers if layered.
