Sugar Free Buckeye Style Brownies

Instructions

  • Prep. Preheat your oven to 350 and double prep your baking pan. I like to line mine with parchment paper or foil and then lightly spray that with nonstick for a recipe such as this one.
  • Sugar Alternatives. In a large bowl, use a whisk to combine together your melted butter with the sugar alternatives (brown and white) until combined. Then whisk in the eggs and the vanilla extract.
  • Dry Ingredients. In a medium bowl, use a clean whisk to combine together the flour and unsweetened cocoa powder. Then add this to the large bowl, with the combined ingredients, and mix until just combined.
  • Bake. Evenly spread the brownie batter in your prepare baking pan and bake until a toothpick comes out with a just a few crumbs and the edges are set (about 28-30 minutes). Then allow the brownies to fully cool before proceeding with the next step.
  • Peanut Butter Layer. Outfit your mixer with a paddle attachment and then beat the peanut butter for about a minute or two to get it creamy. Scrape down the sides of the bowl and set the speed on low. Slowly add the sugar free powdered sugar along with the pure vanilla extract until full combined. Scrape down the sides of the bowl and on low speed, drizzle in the heavy cream and continue to beat until creamy.
  • Layer. Evenly spread the peanut butter mixture over your cooled brownies.
  • Ganache . In a large microwave safe bowl, melt together your chocolate chips, coconut oil, and heavy cream, stopping to stir every 30 seconds. It should take about a minute and a half to two minutes to melt. Pour this over your set peanut butter layer.
  • Peanut Butter Drizzle. In a clean microwave safe cup with a spout, microwave your peanut butter until it is in a 'pourable' consistency (about 30 seconds). Then carefully drizzle this over your chocolate ganache. To make the swirl design, simply use a butter knife to make the pattern.
  • Slice. Once the brownie layers have fully set (about an hour at room temperature) you can slice and enjoy your brownies.
