Ingredients

Optional ingredients: Unsweetened Cocoa Powder as desired for a deeper red color and subtle cocoa flavor. Also optional, a tespoon of vanilla extract for flavor balance.

Instructions

  • Preheat your oven to 325. Prepare your baking sheets for nonstick.
  • Place your dry cake mix in to a large bowl and use a whisk to break up any lumps.
  • Add the oil to the mixing bowl and blend until creamy. Then add the eggs and mix until just combined.
  • For the red food coloring, start by stirring in up to a tablespoon of the food coloring and then adding a small amount as needed to reach your desired 'red' coloring of the dough.
  • Lastly, fold in ¾ cup of the white chocolate chips.
  • Use a cookie scoop to scoop out the cookie dough and then place the cookies on to your prepared baking sheets at least an inch and a half apart.
  • Bake the cookies for 10-12 minutes or until the edges appear to be set. The center will still be soft.
    Carefully press the remaining white chocolate chips into the cookies.
  • Allow the cookies to set on the baking sheet for about five minutes before transferring them to a wire cooling rack to finish cooling.
