Ingredients

  • cups Flour. --Regular all purpose flour.
  • ½ tsp Baking Soda.
  • ½ cup Butter. --Use salted butter that has been melted and cooled to room temperature.
  • ½ cup Brown Sugar Alternative --Measures 1:1 with sugar and that can also be baked with.
  • ¼ cup Granular Sugar Alternative --Measures 1:1 with sugar and that can also be baked with.
  • 1 Banana. --A very ripe banana that has been mashed.
  • 1 tsp Vanilla Extract
  • cups Sugar Free Chocolate --Preferably a no added sugar chocolate bar that has been chopped into chunks.

Instructions

  • Prepare. Prep your baking for nonstick. Parchment paper should work in this recipe. Also, preheat your oven to 350°F.
  • Dry Ingredients. In a medium bowl, us a whisk to combine together the flour and baking soda.
  • Cream. In a large mixing bowl, beat together the melted butter and sugar alternatives on medium high speed until smooth and combined (about 30-60 seconds). Scrape down the sides of the mixing bowl and then add in the mashed banana and the vanilla extract, mixing until combined.
  • Combine. Scrape down the sides of the mixing bowl. Set the mixer on slow or low speed and gradually add the dry ingredients from the second step, mixing until just combined.
  • Fold. Use a rubber spatula or similar item to fold in the chocolate chips.
  • Scoop. Use a cookie scoop to scoop out the cookie dough and place the cookies about two and a half inches apart from one another on the baking sheet(s). If you use a medium scoop you will get about 20 cookies and a large scoop should yield about 12.
  • Bake. Bake your cookies for 10-14 minutes (depending on the size of your cookies) or until the edges are lightly golden brown and the center of the cookies are just set (slightly soft).
  • Set. Allow the cookies to cool on the baking sheet to set for five minutes before transferring them to a cooling rack to fully cool.
