Sugar Free Chocolate Chip Shortbread Cookies

  • Prepare Preheat your oven to 300f. Also, prep your baking sheet(s) as needed.
  • Dry ingredients. In a small or medium mixing bowl, use a whisk to combine together the flour, baking powder, ground cinnamon, and optional salt (if using unsalted butter).
  • Cream In a large mixing bowl, beat together softened butter and sugar alternatives until creamy.
  • Combine. Scrape down the sides of your mixing bowl and then add the dry ingredients from the first bowl to the mixing bowl and mix until just combined.
  • Chocolate Chips. Lastly, use a rubber spatula or similar item to fold in the chocolate chips.
  • Scoop. Use a cookie scoop to scoop out the cookie dough, roll the dough between your hands, and then place the rolled out cookies on to your prepared baking sheet and an inch and a half to two inches apart. Use the palm of your hand to then slightly flatten each cookie.
  • Bake. Bake your cookies for 20-22 minutes or until the bottoms of the cookies begin to turn golden brown.
  • Cool Allow the cookies to sit on the baking sheet for five minutes before transferring them to a cooling rack to fully cool.
