  • Preheat your oven to 325 and prep your muffin pan well for nonstick.
  • In a medium bowl, use a whisk to mix together the flour, baking soda, baking powder, ground cinnamon, and salt.
  • Next, in a mixing bowl, mix or beat together the melted butter, sugar alternative, and applesauce until blended.
    Then mix in the eggs and the vanilla extract.
  • Add the dry ingredients from the first bowl to the second bowl and mix until just combined.
    Use a large cookie scoop or similar sized item to evenly distribute the batter to the muffin holes, filling to about three quarters full.
  • To make the streusel topping, combine together the streusel ingredients and mix until crumbly. Then layer about a tablespoon of the streusel on top of each of the muffins.
  • Bake for 20-25 minutes or until a toothpick comes out clean (not including streusel that may attach itself to the toothpick).
    Let cupcakes cool in the pan for ten minutes before removing.
