  • Prepare. Preheat your oven to 350°F and prep your baking dish for nonstick. Also, in a shallow bowl, whisk together the the granular sugar alternative and cinnamon. In another bowl, place your melted butter.
  • Dough. In a large mixing bowl, use a whisk to combine together the flour, milk, and baking soda, mixing until the dough begins to pull away from the sides of the bowl.
  • Knead. On a clean and lightly floured workspace, transfer the dough from the mixing bowl. Use your hands to knead the dough working it into a ball and it no longer is sticking to your hands.
  • Divide. Break the dough into even halves and continue to break the halves into halves until your have 24 equal sized pieces of dough
  • Coat. Roll each of the pieces of dough into a ball and then dip each of the individual balls into the melted butter and then the sugar alternative and cinnamon (from the first step) to coat. Place the coated dough balls into your prepared baking dish.
  • Bake. Bake the bites for 15 minutes or until they turn a golden brown.
  • Icing. While the bites are cooling you can prepare the glaze. Simply whisk together the glaze ingredients (vanilla extract, powdered sugar alternative, and whole milk) . Once combined, you can drizzle the glaze over your cinnamon roll bites and serve.
