Prepare. Preheat your oven to 350°F. Also, line a baking sheet with parchment paper or you can use a baking mat.
Flour. In a medium bowl use a whisk to combine together the flour and baking soda.
Beat. In a mixing bowl outfitted with a flat beater attachment, beat together the melted butter and brown sugar alternative on medium high until well combined (about a minute). Then scrape down the sides of the mixing bowl and add the vanilla extract and egg and beat the ingredients for another minute.
Dry Ingredients. Add the flour mixture from the medium bowl to the mixing bowl and mix the ingredients until just combined.
Chocolate Chips. Lastly, fold in the chocolate chips.
Croissants. Use a bread knife to slice each of the croissants in half lengthwise. Place two tablespoons of the cookie dough in the center of each croissant and then place the remaining dough on top of each croissant.
Bake. Bake the croissants for 10 minutes, or until the cookie dough on top is starting to turn golden. Allow to cool on the baking sheet before serving.
