Ingredients

Instructions

  • Prepare. Preheat your oven to 350°F. Also, prep or line two baking sheets with parchment paper or silicone baking mats.
  • Dry Ingredients. In a medium mixing bowl, use a whisk to combine together the flour, baking soda, ground nutmeg and ground cinnamon.
  • Cream. In a large mixing bowl, use an electric mixer on medium speed to cream together the softened butter and brown sugar alternative until light and fluffy, about two minutes. Then add the egg, the maple syrup, and extract to the bowl and mix until the ingredients are smooth and fully incorporated.
  • Combine. Scrape down the sides of the bowl and then set the speed to low speed. Gradually add the dry ingredients from the second step to the mixing bowl and mix until a soft cookie dough forms and no dry pockets remain. Try not to overmix the ingredients.
  • Bake. Use a cookie scoop to scoop out the dough and place the cookies about two inches apart on your prepare baking sheets. Bake the cookies for 9–11 minutes, or until the edges are lightly set and the centers still look slightly soft.
  • Cool. Allow the cookies to cool on the baking sheet for 5 minutes so that they can set. Then transfer the cookies to a wire cooling rack to cool completely before serving.
