  • Prepare. Preheat your oven to 350f and prep your baking sheet for nonstick. Parchment paper or a baking mat can work in this recipe.
  • Dry Ingredients. In a medium bowl, use a whisk to combine together the flour, baking powder, baking soda, and cream of tartar.
  • Beat. In a large mixing bowl, beat together the butter and sugar alternative on high until the ingredients are smooth and fluffy. Then add the egg and vanilla extract and mix until combined.
  • Combine Use a rubber spatula or similar item to scrape down the sides of the mixing bowl and then set the mixer speed to medium and gradually add the dry ingredients from the second step to the mixing bowl, mixing until just combined and the dough is pulling away from the sides of the mixing bowl.
  • Divide. Divide the dough into as many sections as Jello colors you intend to use. My cookies were made in four colors which means that the dough was divided into four equal sections. If you are just using one color, there is no need to divide the dough.
  • Jello. For the first section, add two teaspoons of the the first jello packet and knead the dough until combined. You can use food prep gloves to do this and you can add and additional teaspoon(s) of gelatin if needed for color. Repeat this process with the remaining dough.
  • Dough. Use a cookie scoop to scoop out the dough, roll the dough into a ball, and then place the dough balls on to your prepared baking sheet about two inches apart. Use the palm of your hand to flatten the balls to about ½" tall.
  • Bake Bake the cookies for 8-10 minutes or until the edges appear to be set. Then allow the cookies to cool on the baking sheet for five minutes before transferring them to a cooling rack to fully cool.

Recipe Notes

As mentioned earlier, make sure that your chosen gelatin is not sweetened with aspartame. This is because aspartame does not bake well due to its chemical composition.
When choosing a sugar free gelatin product, please read the label for best results.
You can find sugar free gelatin online that has been sweetened with Splenda.
I also found a gelatin that has been sweetened with Stevia which may work for you as well.
Also, the amount of gelatin added can depend on the amount of coloring that you desire in your cookies.
