Ingredients

  • cups Self Rising Flour. --Scoop and level the flour into a bowl. Then use a whisk to flour to break up any lumps etc.
  • 2 cups Sugar Free Ice Cream -Your ice cream should be softened/creamy like thick soft-serve.
  • 2 tbsp Sugar Alternative. --Use a granular sugar alternative that measures like sugar and that can also be baked with. Allulose and Erythritol Blends can work in this recipe.
  • 2 tbsp Butter. --Your butter should be melted. A neutral oil can alternatively be used. You can add additional butter as needed.

Instructions

  • Prepare. Preheat your oven to 350°F (175°C). Also, prep your loaf pan. You can grease your loaf pan, or line it with parchment paper.
  • Wet Ingredients. Place the softened ice cream into a large mixing bowl. Use a whisk to gently stir your sweetener and the melted butter
  • Flour Use a rubber spatula or similar item to fold in the flour until just combined (you will have a thick batter). Do not over-mix.
  • Transfer Transfer the mixture to your prepared loaf pan, evenly spreading it out.
  • Bake. Bake your bread for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely before slicing!
