  • Preheat your oven to 350 and prep your baking sheets for nonstick.
  • Start by placing the oats in a food processor and pulsing them for 15-20 seconds. Then transfer the oats to a medium bowl.
    Add the flour, baking powder, and ground cinnamon to the pulsed oats and use a whisk to combine the ingredients together.
  • In a mixing bowl, beat together the butter and sugars until smooth. Then add the eggs and vanilla and mix until combined.
  • Next, add the dry ingredients from the first bowl to the mixing bowl and mix until just combined.
  • Use a medium sized cookie scoop to scoop out the dough and place the cookies about an inch and half apart on the prepared baking sheet.
  • Bake the cookies for 10-12 minutes or until the sides begin to turn golden brown. Let the cookies sit on the sheet for five minutes before transferring them to a cooling rack to fully cool.
  • To make the icing, simply mix together the powdered sugar alternative with the milk, making adjustments as needed for consistency. Dip the cookies into the icing or drizzle the on top.
