  • Preheat your oven to 350 and prep your pie dish or pie pan well for nonstick. Place the sugar alternative, flour, eggs, milk, coconut, butter, extract, and cinnamon in your blender. Cover the blender and give the ingredients a few quick pulses. Then blend the ingredients until just combined (about 30 seconds).
  • Transfer the ingredients to your prepared pie pan or dish. Bake your pie for 50-55 minutes or until the top of the pie turns golden brown.
  • Place the pie dish on a wire cooling rack to cool to room temperature.
  • While you can serve this pie once is has fully set and cooled, it is even better when you place it into your refrigerator for one to two hours before slicing and serving.
