  • Prepare. Preheat your oven to 375 and prepare your baking sheets for nonstick. Parchment paper or baking mat for example.
  • Dry Ingredients. In a medium bowl, use a whisk to combine together your flour and baking soda. baking powder, and optional salt.
  • Cream. Outfit your mixer with a paddle attachment. Beat together your butter with your sugar alternatives on medium speed until smooth and a little fluffy (about two to three minutes). Then add the vanilla extract and egg and beat on medium speed until just combined.
  • Combine. Scrape down the sides of your mixing bowl and then set your mixer on low speed and gradually add the dry ingredients from the first bowl to the mixing bowl, mixing until just combined (do not over mix).
  • Fold. Use a rubber spatula or similar item to fold in the white and regular chocolate chips, coconut and walnuts. Note that the batter will be thick so it may take longer than you are used to to fold in the ingredients until they are evenly distributed.
  • Scoop. Use a small cookie scoop or tablespoon to drop the cookie batter on to your prepared baking sheet leaving about an inch and a half between cookies (they will spread while baking).
  • Bake Bake your cookies for eight to 10 minutes or until the edges are slightly crisp and the cookie looks “dry”.
  • Cool. Let the cookies sit on the baking sheet for five minutes before transferring them to a cooling rack to fully cool.
