Sugar Free Lemon Lime Shortbread Cookies

Instructions

  • Butter. In a large mixing bowl, beat together your butter with the zests until creamy (about two and a half minutes).
  • Powdered Alternative. Scrape down the sides of your mixing bowl and then add the powdered sugar alternative along with the lemon and lime juices and vanilla extract. Mix the ingredients until combined.
  • Flour. Scrape down the sides of the bowl once again. Set your mixer on low speed and add the flour to the bowl a half cup at a time. Mix until the flour is just combined with the other ingredients.
  • Chill. Lay out two pieces of plastic wrap and the evenly divide the dough between the two pieces of plastic. Form the dough mounds into a disk shape and then tightly wrap the two discs with the plastic. Refrigerate the cookie dough disks for at least and hour.
  • Prep. Preheat your oven to 350⁰ F and line two baking sheets with parchment paper or baking mats.
  • Cut. Take the first cookie dough disk out of your refrigerator, remove the plastic wrap, and then roll the dough out on a lightly floured surface to about a quarter of an inch thickness. Use a cookie cutter to cut the cookies out of the dough and then place them onto the first baking sheet about an inch apart from one another. Repeat this process with the remaining cookie dough and baking sheet.
  • Bake. Bake your cookies for 12-14 minutes or until the edges begin to turn golden brown and the cookies are set in the center.
  • Cool. Let the cookies sit on the baking sheets for a minute and then transfer them to a cooling rack to fully cool.
  • Glaze. To make the glaze, simply use a fork or whisk to combine together the glaze ingredients until smooth and lump-free. Then use a small spoon to drizzle or apply the glaze to your cookies.
  • Set. Allow the glaze to fully set before serving or storing your cookies.
