Sugar Free Molten Chocolate Cakes

  • Preheat your oven to 425 and prep your ramekins well for nonstick.
  • To melt together the chocolate chips and butter, simply place them into a microwave-safe bowl and melt them on high, stopping to whisk every 20-30 seconds until melted. Alternatively, you can use the double boiler method.
  • In a large mixing bowl, beat together the your eggs and sugar alternative on high until pale yellow and thickened . Then stir in the vanilla extract.
  • Use a rubber spatula or similar item to fold in the melted chocolate mixture along with the flour and unsweetened cocoa powder to the mixing bowl. Fold until just combined, do not overmix.
  • Distribute the batter into each of your prepared ramekins, taking care to not fill them more than three fourths of the way full.
  • Bake the cakes for 12 to 15 minutes or until the edges of the cakes are set. The centers should still be 'jiggly'.
  • Let the cakes sit for two minutes and then run a butter knife around the edges to loosen the cakes.
  • To unmold the cakes, simply place a dessert sized plate on top of the ramekin and then flip or invert the cake on to the plate. You can then dust the cakes with additional sugar free powdered sugar and/or top with strawberries before serving.
