Sugar Free Peanut Butter and Oatmeal Cookies

  • Dry Ingredients. In a medium bowl, use a whisk to combine together the flour, oats, baking soda,and baking powder along with any optional salt.
  • Cream. In a large mixing bowl, beat together the softened butter, peanut butter, and your sugar alternatives until smooth and creamy (about three minutes). Scrape down the sides of the bowl and mix in the eggs and vanilla extract until combined.
  • Combine. Add the dry ingredients from the first bowl to your mixing bowl and mix until just combined.
  • Chill. Cover your mixing bowl and refrigerate your dough for 20 minutes to overnight.
  • Bake. When you are ready to bake your cookies, take your cookie dough out of your refrigerator, preheat your oven to 350 and prep two baking sheets for nonstick. Use a medium cookie scoop to scoop out the dough and place the cookies about an inch and half apart on the prepared baking sheets. Bake the cookies for 10-12 minutes or until the sides begin to turn golden brown.
  • Cool. Let the cookies sit on the baking sheets for five minutes before transferring them to a cooling rack to fully cool and set.
