Sugar Free Peanut Butter Cookie Cake

  • Preheat your oven to 350 and prep a springform pan for nonstick
  • In a medium bowl, combine together your flour, baking powder, and baking soda.
  • Using a large mixing bowl, beat together your butter and sugar alternatives until creamy. This can take a few minutes.
  • Beat in the peanut butter, eggs, and vanilla extract until incorporated.
  • Add the dry ingredient from the first bowl to the mixing bowl and mix until just incorporated.
  • Scrape down the sides of the bowl and then fold in the peanuts along with any optional chips.
  • Evenly spread the batter into your prepared pan
  • Bake the cake in the center of your oven for 20-24 minutes or until the edges of the cake start to turn golden brown (the center will be soft).
  • Let the cake cool in the pan for 15 minutes before running a butter knife around the edges to loosed the cake from the pan. Then you can loosen the outer rim of the pan and allow the cake to fully cool before slicing and serving (or frosting).
