Equipment

Ingredients

Optional Add-Ins. Pretzels (crushed or chopped), chopped peanuts, or sugar free mini chocolate chips. 1 cup

Instructions

  • Prepare. Start by placing your loaf pan into your freezer to get it cold while you work. Also, outfit your mixer with a whisk attachment.
  • Beat. Use a whisk or fork to combine together your heavy whipping cream and vanilla extract in a large mixing bowl. Then beat the heavy whipping cream and vanilla on medium speed until stiff peaks form (about three to five minutes). The stiff peaks should be able to stand on their own
  • Add Ingredients. Add your sugar free condensed milk, creamy peanut butter, and optional ingredients (such as crushed pretzels) to the mixing bowl. Reduce the mixer speed to low mix the ingredients until fully combined and smooth. Make sure there are no ribbons of unincorporated condensed milk.
  • Transfer. Transfer the ingredients from your mixing bowl to the loaf pan. You can use the backside of a large spoon or rubber spatula to smooth the ice cream out.
  • Freeze. Cover your loaf pan with plastic wrap and freeze the ice cream until set (about six hours to overnight).
  • Serve. Enjoy your ice cream with your favorite sugar free ice cream toppings.
