  • Prepare. Preheat your oven to 350f. Prep your baking pan with parchment paper that overhangs the sides of the pan. Grease or spray the parchment paper with nonstick.
  • Dry ingredients. In a medium bowl, use a whisk to combine together the flour, baking powder, and salt.
  • Wet ingredients. In a large mixing bowl beat together the eggs and vanilla extract until creamy. Then stir in the melted butter.
  • Combine. Add the dry ingredients from the first bowl to the large mixing bowl and mix until just combined. Then transfer the ingredients to your prepared baking pan.
  • Jam. Lightly tap the bottom of the baking pan on your countertop to assure that the batter is evenly distributed and to remove any air bubbles. Then use a spoon to drop large dollops of preserves of the batter. Using a butter knife or the backside of the spoon, swirl the preserves over the batter in a random design (does not need to be evenly coated over the batter).
  • Bake. Bake the cake for 20-25 minutes, until the top is lightly golden browned and the center of the cake appears to be set.
  • Cool Allow the cake to cool for 10 minutes, then use the sides of the parchment to remove the cake from the pan. When the cake is set you can slice and serve it.
