  • In a medium bowl, whisk together the flour and the almond flour. Set this bowl aside.
  • Next, in a mixing bowl, beat together sugar alternative and the butter until creamy. Then add the egg and the vanilla to the mixing bowl.
    Now, add the dry ingredients from the first bowl to the mixing bowl, scraping down the sides as needed. Mix this until just combined.
  • Divide the cookie dough in two discs and then wrap them in plastic wrap. Place the cookie dough discs into your refrigerator to set for at least 30 minutes.
  • Line a baking sheet (or two if needed) with parchment paper. Then lightly flour a clean work surface.
  • Remove the dough from your refrigerator and then use a rolling pin to roll the dough to about ¼” thick on the work surface.
  • Use your three inch cookie to cut out shapes from the rolled out dough, placing the cookie shapes on to your prepared baking sheet until you have 36 cookies cut out.
  • Next, using a one inch cookie cutter of the same shape, cut the center out of half (18) of the cookies. (This will allow us to see the jam filling in the final linzer cookies! )
  • Place the cookies in your refrigerator to set for at least 30 minutes.
  • When you are ready to bake the cookies, preheat your oven to 325 and take the cookies out of the refrigerator.
  • Bake the cookies for 15-18 minutes or until they are just golden brown. Then allow the cookies to cool completely on the tray.
  • When the cookies have cooled, generously dust the tops of the cookies with a hole in the center with sugar free powdered sugar.
  • Use a tablespoon to spread jam over the cookies that do not have a hole cut out. Then top each of the jam covered cookies with a cookie dusted with the sugar free powdered sugar.
