Ingredients you need to make Linzer Cookies.
- Flour. All purpose flour (see above for alternatives).
- Almond Flour. Added for texture and that nutty flavor.
- Sugar Alternative. Use a granular sugar alternative that measures like sugar and that can be baked with.
- Butter. Use butter that is softened to room temperature.
- Egg. Holds the ingredients together.
- Vanilla Extract. Helps to balance out the flavors.
- Sugar Free Powdered Sugar. For dusting on top.
- Jam with no added sugar. For the filling.

How to make Linzer Cookies.
Preparation Time: 15 minutes
Bake time: 18 minutes
Chill Time: 30 minutes
Servings: about 18 cookies
- In a medium bowl, whisk together the flour and the almond flour. Set this bowl aside.
- Next, in a mixing bowl, use a paddle attachment to beat together sugar alternative and the butter until creamy and fluffy. Then add the egg and the vanilla to the mixing bowl.
- Now, add the dry ingredients from the first bowl to the mixing bowl, scraping down the sides as needed. Mix this until just combined.
- Divide the cookie dough in two discs and then wrap them in plastic wrap. Place the cookie dough discs into your refrigerator to set for at least 30 minutes.
- Line a baking sheet (or two if needed) with parchment paper. Then lightly flour a clean work surface.
- Remove the dough from your refrigerator and then use a rolling pin to roll the dough to about ยผโ thick on the work surface. Use your three inch cookie to cut out shapes from the rolled out dough, placing the cookie shapes on to your prepared baking sheet until you have 36 cookies cut out.
- Next, using a one inch cookie cutter of the same shape, cut the center out of half (18) of the cookies. (This will allow us to see the jam filling in the final linzer cookies! ). Then place the cookies in your refrigerator to set for at least 30 minutes.
- When you are ready to make the cookies, preheat your oven to 325 and take the cookies out of the refrigerator.
- Bake the cookies for 15-18 minutes or until they are just golden brown. Then allow the cookies to cool completely on the tray.
- When the cookies have cooled, generously dust the tops of the cookies with a hole in the center with sugar free powdered sugar.
- Use a tablespoon to spread jam over the cookies that do not have a hole cut out. Then top each of the jam covered cookies with a cookie dusted with the sugar free powdered sugar.

- Linzer cookies are known for their almond flavor. You can add additional almond flavoring by adding almond extract.
- To limit the jam from spreading outside of the cookies, only spread the jam in the center of the cookies. When your place the top cookie over the jam it should spread in place.
