This is a simple recipe for making thumbprint style cookies. These cookies are keto, low carbohydrate, sugar free, and gluten free diet friendly.
To make these cookies, you will need sugar free jam.
My cookies were made using homemade raspberry jam. You can really use any sugar free jam of your choice if needed.
Ingredients needed to make sugar free thumbprint pistachio cookies.
- Egg. The egg is used for both moisture and to hold the cookies together.
- Erythritol If you decide to use another sugar alternative, use one that can be baked with and that also measures like erythritol.
- Coconut Oil. The coconut oil should be melted.
- Vanilla Extract. You could alternatively use another extract such as maple extract.
- Almond Flour. This is a flavorful flour alternative that is also keto and gluten free.
- Pistachios. The pistachios should be chopped.
- Sugar Free Jam. You can use store bought sugar free jam or use this recipe to Make Sugar Free Jam. My cookies have sugar free raspberry jam in the center.
How to make Sugar Free Keto Pistachio Thumbprint Cookies
Preparation Time active time 45 minutes | baking time 12-14 minutes | Waiting time 10 mins| Total time 1:10hs
- Prepare your baking sheets for no stick using parchment paper or the method of your choice. Preheat your oven to 325. Also, place your chopped pistachios on a shallow bowl or plate.
- Whisk your egg slightly in a mixing bowl. Then add the erythritol , coconut oil, and vanilla extract and whisk until just combined. Lastly, stir in the almond flour.
- Use a one or two inch cookie scoop (depending on your desired cookie size) to scoop out the cookie dough and roll each of the scooped dough into a ball.
- Roll each of the cookie dough balls in the chopped pistachios and then place each of the balls on to the prepared cookie sheet. Use your thumb or curved object to press in the center of each ball enough to hold the jam. Lastly, fill each indentation with the jam (about a half teaspoon per cookie).
- Bake the cookies for 12-14 minutes or until the sides begin to turn golden. Transfer the cookies from the baking sheet to a cooling rack to cool
