Tips for making the best raspberry jam.
Pectin is used as a thickener since there is no added sugar in these recipes. It is essential that you are using a pectin that is specifically for sugar free recipes for best results.

- If you are using store bought frozen strawberries make sure that no other ingredients, such as sugar, have been added.
- Chia seeds or agar agar can be used instead of pectin as a thickener. The amount that you will need to use will differ from the pectin so I would start with a two to three tablespoons and make adjustments from there .
- There are two different methods for making jam in this recipe(s). The stevia method used for making jam is a simple recipe that is made using a large saucepan on the stove while the sucralose method uses a more traditional canning method which entails boiling the filled jars.
- When selecting jars to use in this recipe, select jars that are specific to canning. This means that the jars should have lids that can be securely placed on the jars.
- Prepare your jars by following the manufacturers direction for the jars before using them. The directions may also have specific instructions for boiling the jars when using the sucralose method of making jam.
- It is usually recommended that when you fill the jars they are filled within a quarter inch of the top of the jar. Also, the jar rims should be wiped off before placing the lids on.

How to Make Raspberry Jam Using Stevia
This recipe is for a refrigerated or freezer storage and not for shelf storage. For shelf storage, follow the manufacturer's' instructions that came with your canning jars
- Prepare your containers or jars for storage as indicated by the manufacturer.
- In a large saucepan combine together the stevia, pectin and water. Bring this to a boil while stirring constantly.
- After the ingredients in the saucepan have boiled for a full minute, remove the saucepan from the heat and stir in the mashed raspberries that you have prepared.
- Allow the ingredients to sit at room temperature for ten minutes and then carefully transfer the jam to your prepared containers, leaving about a half inch of space on the top, and then cover the container.
- Let the jam to cool until set (overnight to up to 24 hours).
- Store the jam in your refrigerator (up to three weeks) or freezer (for up to one year).
How to Make No Added Sugar Raspberry Jam Using Sucralose.
Prep Time: 30 minutes.
Process Time: 5-10 minutes, depending on manufacturer's directions, jar size, and altitude.
Yield: 6 half pints or 3 pints, depending on the jars you use.
This method for jam that can be stored on a pantry shelf until opened requires using a traditional canner or a canner rack and boiling water.
- Start by preparing your glass canning jars as indicated by the manufacturer for sterilization.
- In a large stockpot or saucepan (not on the stovetop yet), use a whisk or a large slotted spoon to combine together the raspberries, pectin, and water. Stir the ingredients constantly until the ingredients have fully dissolved together. Then allow the ingredients to sit for ten minutes.
- Place this stockpot on your stove and bring it to a boil, stirring constantly. Once it boils for about a minute, you can carefully remove the stockpot from the stove and stir in the sucralose. Skim off any foam as needed.
- Carefully transfer the mixture to your prepared canning jars using a funnel or ladle, leaving between ยฝ-ยผ" of room at the top. Then wipe down the rims of the jars to remove water or jam that may be on them.
- Securely seal the jars, as indicated by the manufacturer. Make sure that the bands are tight for boiling according to the manufacturer's directions for your canner.
- For processing your jars in the hot water, it is best to use the directions that came with the canner as this can vary. It is usually between five to 10 minutes, depending on the size of the jar and the altitude.
- After the jars are done processing and you have turned off the heat, remove lid and let jars stand for 5 minutes before removing the jars to cool .Allow your jars to cool completely as they will be hot.
- Before storing your jars on a shelf, make sure that the seal is set by pressing in the center. If the center of the lid does not move, your should be good to go.
Expert Tip ๐ For a seedless jam, press the jam mixture while still warm through a fine mesh sieve to remove the seeds.
How to store homemade raspberry jam.
For the suculose jam recipe, make sure that the lids are secured on the jars according to the manufacturer's directions. Unopened jars of processed jam should be stored in a cool dark location for up to a year. Both jams, when opened, should last about three weeks when refrigerated properly
