Tips for making the best icebox cake.
Whipped topping (the tub kind) is an essential ingredient in this recipe. If you cannot find a sugar free whipped topping in the freezer section of your local grocery store, you can use this recipe for Sugar Free Whipped Topping to make your own.
More helpful tips for you.
- Sugar free graham crackers are very hard to find. However, one regular graham cracker has about a gram of sugar in it if you are okay with that.
- Strawberries are used in this recipe for color and flavor. You can alternatively use another fruit with or instead of the strawberries. Peaches or berries are good choices for example.
- Take this simple recipe up up a notch by adding extra flavor. You can do this by stirring in half a package (with the whipped topping) of sugar free instant pudding mix. If you want that cheesecake flavor, you can whip up softened cream cheese in your mixer and then fold the whipped topping into the cream cheese.
- Using fresh fruit is recommended for this recipe. This is because frozen or packaged fruit often has other ingredients (such as sugar) added and frozen fruit can get watery as it thaws out.
How to store strawberry icebox cake.
This dessert is really best within 24 hours after it has been freshly made. However, if you have leftovers, you can wrap them well in plastic wrap and refrigerate them for up to four days- after which the crunchy ingredients get too soggy to enjoy.
