Ingredients needed to make Dessert Bars with Raspberries.
Crust.
- Almond Flour Crushed sugar free cookies or low sugar graham crackers can alternatively be used.
- Butter. Your butter should be melted but, not browned.
- Sugar Alternative. Use a granulated sugar alternative that measures like sugar and that an also be baked with.
- Optional- depending on the other ingredients that you are using, you can add lemon zest or vanilla extract for additional flavor in your crust.
Filling.
- Sugar Free Condensed Milk. Alternatively, you can use coconut milk or heavy whipping cream . Use a full-fat option for best results.
- Egg Yolks. You will not need the whites for this recipe however, you can freeze them for up to a year ๐.
- Lemon Juice. Use freshly squeezed lemon to juice to make sure that there is nothing else, such as sugar, added to the lemon juice.
- Raspberries. Fresh raspberries are preferred in this recipe.
How to make Lemon Dessert Bars.
Prep time: 15 minutes
Cook time: 25 minutes

Crust.
- To make the crust, prepare a square baking pan (such as an 8X8" one) for nonstick.
- Combine together the almond flour (or alternative), melted butter, sugar alternative, and optional lemon zest in a mixing bowl of food processor. Mix the ingredients until well combined and the mixture resembles wet sand.
- Transfer the mixture to the prepared baking pan and press down firmly to fully cover the bottom of the baking pan.
- Bake the crust for 10 minutes or until it appears set with a bit of golden coloring.
- Set the crust aside to fully cool before adding the filling layer.

Filling.
- Make sure that the base crust has fully cooled before adding the filling.
- To make the filling combine together the sugar free condensed milk (or alternative), egg yolks, lemon juice and lemon zest in a mixing bowl . Mix the ingredients until they are creamy and combined.
- Next, use a rubber spatula to fold in the raspberries.
- Evenly spread the filling over the cooked base crust.
- Bake the bars until set, about 12-15 minutes.
- Remove the bars from your oven and then let the bars cool to room temperature.
- Lastly, transfer the bars to your refrigerator to fully set (about a half hour).

Tips for making the best lemon bars.
This recipe has an almond flour crust. You can make the crust in advance or use the crust of your choice if you desire.
More helpful tips for you.
- While my bars were made using raspberries, you can use the berry of your choice with or in place of the raspberries. Blueberries, for example, can work well in this recipe.
- Use parchment paper to line your baking pan. This will not only make for easy clean up, it will also make it easier to lift the bars from the pan to slice them into servings.
- Allow the base crust to cool completely before adding the lemon filling. This will help prevent the filling from softening the base while also giving the base a crispier texture.
- You can scatter additional raspberries over the filling just before baking. This can make your bars look even better.
How to store sugar free lemon bars.
These lemon bars should be stored in an airtight container and refrigerated. If properly stored, they should keep for up to five days. I would not freeze these bars however.
