To make this recipe you will need both almond flour and almond meal. You can find almond flour and almond meal here.
What you need to make berry crumble bars.
This recipe has three layers. There is a base crust layer, filling, and crumble topping for the layers.
Base.
- Almond Flour. This is a gluten free and keto friendly flour alternative. It also adds both flavor and a bit of protein.
- Granulated Erythritol. This is the sugar alternative of choice for this recipe. However, you can use another granulated alternative if desired.
- Melted Butter. This is used to hold the ingredients together.
- Lemon Zest. Zest is added for a flavoring that also enhanced the taste of the baked fruit.
Filling.
- Berries. You will need two cups total, no matter how many kinds of berries you choose to use.
- Chia Seeds. The chia seeds help to thicken the fruit and make for a lush jam-like filling .
- Erythritol. Sugar alternative help sweeten the crumble filling. You can use the sweetener of your choice a long as it can be baked with.
- Water. The water helps in assisting the chia seeds in thickening the the fruit.
Topping.
- Almond Meal. This is the used instead of flour.
- Butter. The butter should be cut into small cubes.
- Shredded Coconut. For flavor and texture.
- Lemon Zest. Again, zest is added for a flavoring that also enhanced the taste of the baked fruit
How to make berry crumble bars.
Prep Time active time 45 minutes
Baking time 25 minutes
Yields 9 servings.
Base.
- Start by preheating your oven to 350f. Also, line an 8 inch square baking pan with parchment paper that overhangs.
- Next, combine the ingredients to make the crust. In a medium mixing bowl, combine the almond flour, lemon zest, granulated erythritol and melted butter.
- When the ingredients start to stick together you can transfer them to the prepare baking pan.
- Press the crust ingredients firmly into the pan until the entire bottom of the pan is covered with crust ingredients.
- Bake the crust until it begins to brown (about eight minutes). Then remove the crust from the oven and allow it to cool so that you can add the remaining layers.
- You can keep the oven on as you will need to place the prepared crumble into the oven to bake.
Filling.
- Start by activating the chia sees. Simply place the seeds in a bowl or cup with a half cup of water. It will take about a half hour to form the desired gelatinous paste for the filling. You can do this while the crust is baking to save time.
- To make the filling, place the thickened chia paste along with the remaining filling ingredients into a good processor or good blender. Then pulse this as needed to combine the ingredients.
- Next, in a saucepan over medium heat, transfer the ingredients from the blender or processor. Do not stir the ingredients as we are trying to remove the water and thicken the ingredients into a jam-like filling. This should take about three to five minutes total.
- Remove the filling from the heat and allow it to cool for five minutes. It will thicken more as it cools.
- Once the filling has cooled you can transfer it to the pan and evenly spread it over the crust.
Topping.
- In a medium bowl, combine together the almond meal, granulated erythritol, shredded coconut and lemon zest.
- Once the ingredients have been combined you can work in the cubes of butter.
- When the ingredients resemble a crumble topping, you can evenly distribute it over the filling that you placed over the crust in your pan.
- You can now bake the bars at 350F for 12- 15 minutes or until the crumble turns golden.
- Allow for the crumble to fully cool before serving as it will need to set. Refrigerating the crumble can help speed this up.
Tips for making the best crumble bars.
While my crumble is made with raspberries and blueberries, you can use the fruit(s) of your choice. I like blackberries or strawberries for a recipe such as this one too.
More helpful tips for you.
- Almond meal is used for the topping. You can also add sliced almonds for an additional crunch.
- I have used fresh fruit in my bars. You can also use frozen fruit if you do not have the fresh kind. Just make sure that there is no added sugar in the packaging and the fruit has thawed.
- When cooking the filling ingredients on the stove. we need the excess liquid to evaporate. Minimal stirring is suggested however, but it should be done if needed to make sure the ingredients do no burn.
- The jam-like filling will develop its thickest consistency when cold. Let it cool while you make the crumble.
- You will know when these bars are done baking when the crumble begins to brown. There may also be a bit of bubbling in the center.
How to store crumble bars.
Once your crumble bars have fully cooled and are set, they can be stored in an airtight container. When properly stored and refrigerated, these bars should keep for up to a week.
