- Sugar Free Cake Mix. Use a yellow or light colored cake mix. You will need just the dry cake mix and not the other ingredients for this cookie recipe.
- Sugar Free Strawberry Jello. Again, you will need just the dry mix and not the other ingredients.
- Butter. Your butter should be softened to room temperature.
- Egg. The egg should be at room temperature.
- Vanilla Extract. Really, you could use strawberry extract instead if you want more of that strawberry flavor in your cookies.

- Sugar Free Strawberry Jam. Strawberry jelly or puree could also work in this recipe.
- Cream Cheese. The cream cheese should also be softened to room temperature to make it easy to mix with the other ingredients.
- Sugar Free Powdered Sugar. The amount of powdered sugar can be adjusted as needed for consistency.
How to make Sugar Free Strawberry Sandwich Cookies
Serving : 10 servings

- In small bowl, empty out both the cake mix and the jello. Use a fork to blend the mixes together.
- Next, in a mixing bowl, beat the cream cheese until smooth. Then beat in the blended mixes from the last step. Stir in the egg and vanilla extract until just combined.
- Cover the mixed cookie batter and place it into your refrigerator to set for at least an hour (or up to two days).
- When you are ready to bake the cookies, preheat your oven to 350 and prep two baking sheets for nonstick. I like to use parchment paper for a recipe such as this one.
- Use a cookie scoop to scoop out the cookies and place them on to the baking sheets about two inches apart from one another.
- Bake the cookies for 10-12 minutes or until the edges seem to be set. Then take the cookies out of the oven and let them cool on the baking sheets .
- To make the filling, simple beat together the ingredients until creamy. You may need to make adjustments in the ingredients as needed to get your desired consistency. Then use a piping bag or zip top bag with a cut corner to apply the filling to the insides of half of the cookies. Place the inside of a second cookie over or facing the filling to make a sandwich. You can place the finished cookies in your refrigerator to help them fully set.
Expert Tip 👉 It is best to allow the outer cookies to fully cool before assembling these cookies. If the cookies are not allowed to fully cool you risk the possibility of the filling melting.
